Yum! I wouldn’t call myself a vegetarian, but I tend to lean towards preferring vegetarian meals. One of my favorites is making black bean burgers- I puree black beans and chop up a ton of veggies like mushrooms and corn and zucchini and form them into patties. They taste awesome and i have successfully tricked myself into eating lots of veggies. :))) Win/Win.

I like making veggie wraps, with sauteed mushrooms, avocado, tomato and cheese. I have to do a lot of day time travel for my job and so we can spend time together my boyfriend and I will pack a little picnic to have when I get off (: That’s my favorite one to make!!

Personally, I find meat dishes to actually be restrictive! In not eating meat, I feel forced to create really creative, delicious one-pot dishes. Back in my days of eating meat, my plate looked so boring – 1/4 meat, 1/4 carb, 1/2 veggie. Now I get big huge bowls and plates of awesome pastas, salads, quiches, etc.

Non-vegetarian here- Can the curried soup be made with chicken stock rather than veggie stock or water? (I’d make it with veggie,but I have some homemade chickenstock I need to use up post haste.

I’m not a vegetarian, nor do not live in a vegetarian household, but these look amazing. It gets difficult to cook for a husband who wants meat, meat, meat with everything(!!)… but I like to confuse him with dishes like these every once in a while – my go-to recently has been black bean burgers with pineapple, so good!

Wow, perfect time for this post! I just needed good vegetarian recipes for this month! Couple media persons here in Finland challenged people to spend A Meat-Free-October, and I decided spend it too. Perfect warming foods for cold autumn evenings!
I am a long time follower, first time “commenter”. Just wanted to tell you how much I LOVE your blog! It’s one of the few web pages I can actually view while living abroad (in China there are ridiculous censors on everything), and checking it was/is part of my morning routine before going to school. Every recipe in this post is amazing. I have been a vegetarian for longer than I haven’t, and I just *love* the opportunity to try new recipes. i can’t say i know a vegetarian who feels that they’re getting “the short end of the stick” when it comes to the deliciousness of animal-free food. that’s a pretty antiquated idea. as a long-time vegan, the foods i eat and make are so much more flavorful and inventive without the smell and taste of dead animal overwhelming everything.

Hi all: just a heads-up, New Castle is NOT vegetarian friendly–they use fish enzymes to brew the beer. Sorry.
I have recently lost a kidney to cancer. I also have MS. My nephrologist wants me to convert to a Plant Based diet. I’ve never been a big eater but this is so extreme I’m at a loss as to how to get started. I’m not even sure I can do this. No meat, fish, poultry or diary products from such animals!! It’s hard to teach an old dog new tricks. I’m suppose to be 50% converted by December. Help!!
