Yep, you read that title right. This pizza is inspired by my love for pineapple fried rice. Same toppings, but there isn't actually fried rice on this pizza.
So you can breathe easy.
Or if you were really into the idea of fried rice on top of pizza, you should totally try it and tell me how it goes. It'll be a pizza adventure. Which is probably the best kind of adventure, except maybe a donut adventure.
I digress.
Another bit of weird here: there's baked tofu on this pizza. It's actually really delicious! Try it. But if you just can't—you just don't think you could ever let baked tofu on a pizza pass through your lips—that's okay. You could change it to cooked shrimp or chicken.
But remember, it's a pizza adventure, guys. So, get into it.
Pineapple Fried Rice Pizza, makes two (serves 4-6).
2 1/4 teaspoons active dry yeast (one packet)
pinch of sugar
1 1/8 cups warm water
2 tablespoons olive oil
2 2/3 cups all-purpose flour
1/3 cup whole wheat flour*
1 1/4 teaspoons salt
For the toppings:
1/2 cup of your favorite tomato sauce
7 ounces baked tofu (see how I make it here)
1 bell pepper, chopped
8 ounces pineapple (fresh or canned), chopped
3-4 cloves of garlic, chopped
1 small white onion, chopped
8-10 ounces fresh mozzarella
2-3 tablespoons sliced green onions
a couple big pinches of red pepper flakes
To make the dough, begin by stirring together the warm water and sugar. Sprinkle the yeast over the top of the water and allow that to sit and activate for 5-6 minutes. In a large bowl, combine the oil, flours, and salt.
*You can use 3 cups all-purpose flour instead of 2 2/3 cups all-purpose and 1/3 cup whole wheat if you prefer. I like the addition of a little whole wheat, as it adds a little more chewiness (in a good way) to the crust. Pour the yeast mixture in with the flour, and stir until a dough ball forms. Knead for 3-4 minutes until the dough begins to feel elastic-like. Place in a lightly oiled bowl, cover, and allow to rise for 1 hour or until nearly doubled in size. This makes enough dough for two pizzas; if you'd like to make just one, simply cut everything in half as best you can and give it a go. :)
While the dough finishes up its rise, bake the tofu. I also sautéed the chopped bell pepper, onion, and garlic in a hot pan for 2-3 minutes, just until it softened. This will give it a little more of that fried rice texture/taste.
Roll out the dough on a lightly floured surface. Get it as thin as you reasonably can. Once ready, place the dough on your baking sheet or hot stone. I will place my stone in the oven while the oven is preheating, allowing my pizza stone to heat up as well. Add the sauce, pineapple, peppers, onions, garlic, baked tofu, and cheese.
Bake at 400°F for 18-20 minutes until the edges begin to brown and the cheese starts to bubble. Remove from the oven and sprinkle on the green onions and red pepper flakes.

OK, I’m not a fan of pineapple on pizza… the texture, Emma, the texture! But this sounds good and I would try it, but after I removed the pineapple. I’d let it soak in and give the flavor first, though! That counts right?
Also, I totally want to try rice on pizza. I’ll let you know how it goes 🙂

Mmm! This looks so good! I’m definitely going to try it. I might cheat and buy pre-made dough though. Not going to lie.
I imagine that sweet chili sauce instead of tomato sauce here. Round Table uses it on their Maui Zowie (similar to a Hawaiian) and it is just lovely.
Pineapple on pizza isn’t my thing, but you make it look worth trying!
I love biting into a pineapple while eating food and not fruits. And on top of pizza, i have to try this. Never made a pizza at home before(amateur chef), maybe its time

This looks awesome! The title is definitely eye catching, but it totally doesn’t sound weird to me at all! Those flavor combos are the bomb.com. I might even try this WITH the tofu if I’m feeling bold 😉 But I’m sure shrimp or chicken is an amazing alternative.
Pizza is a great place to combine any other favorite foods (mac n’ cheese pizza, dessert pizza, maybe you can even come up with a DONUT PIZZA!!!). This sounds delicious!

Yum! in australia we put all sorts on our pizza, pineapple is a favourite but love roast beetroot, lamb and fetta, then when out of the oven, place rocket coated in balsamic vinegar and pine nuts.. delicious! must try your one.. yum yum

I want this NOW! I am a huge hawaiian pizza fan as well as a pineapple fried rice fan. This looks like a perfect combo.
My husbands grandmother always used rice on her pizza! She would cook long grain rice, then add it with ground beef and the pizza sauce. That would make the base of the pizza! Then add her toppings, cheese and bake! It sounds weird but is actually delicious! I swap the beef for ground turkey. My friends call it “Pizza Lasagna” haha 🙂
I super want to try this!! Would it work to use only Whole Wheat flour or is the combination necessary?
