I can still remember the first time I ever tasted a Thai iced tea. My sister Rachel has always been a more adventurous foodie than I have, and years ago she took me to a local Thai restaurant back in Pittsburgh for a sister lunch where she ordered me a sip of absolute heaven in a glass. Ever since then, it’s impossible for me to step into a Thai restaurant without ordering myself one. And even though Todd and I always share our food with each other, I make him get his own. I thought the sweet and creamy nature of a Thai tea would make a perfect base for a blended frappe, and it turns out that I was right! Wanna make your own?Thai Tea Frappe, serves one.
4 teaspoons Thai iced tea mixย (if you have one, check your local Thai food market for a similar mix)
tea sock (or tea strainer)
1 cup water
splash half & half cream
4 teaspoons sugar
1 scoop vanilla ice cream
6-7 ice cubes
whipped creamFirst, bring your filtered water to a boil. Add your Thai tea mix to a tea sock (or directly to the water if you have a tea strainer), pour your hot water through the sock, and allow the tea to steep for at least 5 minutes. I doubled the strength of the tea, so if you’re using a different brand of tea mix, just make sure to double the amount of tea for one cup of water. Be careful not to spill the tea or touch the concentrate or wet tea leaves with your bare hands. It’s a really bright orange and will totally stain your hands or clothing if you’re not careful!While your tea mix is still hot, add your sugar into the tea and stir to dissolve the sugar. Allow the tea to cool and pour the tea into a blender, and add the cream, ice cream, and ice cubes to the blender.ย If you were thinking ahead, you could also make a batch of tea at regular strength and pour it into ice cube trays for your ice. This would add more intensity to the Thai tea flavor as the drink melts.
Mix until combined and the ice is broken into very small pieces. Adjust the ingredient amounts if needed and blend just to combine. Pour into a glass and garnish with whipped cream (or some beautiful star anise).
You could definitely keep several servings of the tea/sugar mix in your fridge to pull out and make the process a lot faster whenever the craving hits you. If you haven’t had Thai tea before, this is a great introduction to the sweet and spice-filled flavor, and if you’re already crazy about it, then you’ll love this twist on the classic taste. In case anyone is interested in Thai tea without the food colorings added, I get mine from Arbor Tea!
(There’s probably nothing wrong with the coloring – it’s FDA approved and all of that, but if you prefer your Thai tea without it, it’s very good!)

I practically lived on Thai iced tea while I was in Thailand for a few months. It’s incredible, both black, and with condensed milk, which is traditionally how it is served! I haven’t found a place yet in North America that makes it quite the same, it’s always so much sweeter! I can’t wait to try this recipe, maybe it will be closer to what I’ve been looking for!

I have been brewing my own thai iced tea for years, after moving to a small town without a decent thai place nearby. I have altered my recipe over the years, but I have found that using palm sugar ( the kind that comes in little cakes) instead of ordinary white sugar really brings out the flavors of the tea and gives you that authentic taste! Just a thought to pass along….
