Oh man, do I love waffles. They are the fancy layer cake of the breakfast table (pancakes are the sheet cake, obvs). I got really excited when I learned about bubble waffles (also called egg waffles). I love crispy on the outside, chewy on the inside waffles (like Belgian), so these looked right up my alley. I like to think of these as taco waffles, since you can fill them with fresh fruit and fold them up. Which is perfect because these are peanut butter waffles! So feel free to fill them with your favorite jam or berries.Peanut Butter Bubble Waffles, makes 3-4.
Recipe adapted from the instructional booklet my waffle maker came with.
2 egg yolks
3 egg whites
3/4 cup cake flour
1/4 cup + 2 tablespoons sugar
3/4 teaspoon baking powder
pinch of salt
1/4 cup + 2 tablespoons milk
1/2 tablespoon vanilla extract
3 tablespoons butter, melted
1/4 cup creamy peanut butter
Separate the eggs and discard one of the yolks (or save it if you're making scrambled eggs or something later). In a large bowl sift together the cake flour, sugar, baking powder, and salt. Add in the egg yolks, milk, and melted (and slightly cooled) butter. Stir together. Add the peanut butter and stir until creamy.
In the bowl containing the egg whites, whisk the eggs until they become foamy/frothy. Gently fold these into the batter until just combined.
Pour about 1/3 cup of batter into the ready waffle iron and cook according the directions.My CucinaPro bubble waffle maker's instructions directed me to flip the maker just after pouring the batter. Weird, right?
You could also use this batter in a Belgian waffle maker, so don't feel like you HAVE to have the exact same waffle maker as me. Whatever waffle maker you use just follow the manufacturer's directions, as cook time may vary slightly.If you want your waffle to be a little easier to fold, here's a tip. As you remove it from the waffle maker drape it over a drinking glass turned on its side. The waffle will gently fold around the glass as it cools. This will help you avoid rips and tears.Serve warm filled with fruit or jam, and maybe a little Nutella. Yum! Enjoy. xo. Emma

I actually have a silicone pan to make waffles in the oven. It is not perfect and sometimes it gets a bit sticky but I really can’t have another appliance sitting around.

This waffle maker is some kind of unicorn of waffle makers. Just when you thought there wasn’t a way to improve the beauty of them. LOVE the presentation and styling. I’m always working on improving that. When I hear people complain about food photos on Instagram, I’m stunned. lol I could look at the good ones all day long.
I wouldn’t consider these to be waffles in the traditional Western sense, and certainly aren’t designed to be eaten like them… They’re a Hong Kong street snack that are served in paper bags, and you’re supposed to eat them by tearing off the little eggs one by one. This recipe looks yummy, but to me (a person of HK heritage) covering the ‘waffle’ with toppings and eating them off a plate (with utensils?!) seems absurd haha.

These egg waffles are everywhere on the streets in Hong Kong (where I live!) and they’re always sold alongside peanut butter and condensed milk waffles of the normal kind, but no one ever thought to put condiments on egg waffles.. pretty genius!

You could buy silicone bakeware for waffles.
We simply love them because they are so easy to use with your oven or microwave and cleaning up afterwards is not such a mess!

Oh I’ve seen this lots where I’m from (singapore) though it originated in Hong Kong. I’ve never heard of them being called bubble waffles though. We usually call them by its Chinese name but in English it would be more commonly known as egglets instead. I love plucking off the “egglets” one by one to eat! π
I believe the reason why you have to flip the waffle maker over after pouring in the batter is so the rest of the batter can drip to the other side to cook, forming a complete spherical shape. This leaves the inside of the individual egglets airy and fluffy and the outside crispy. It’s sort of like how takoyaki balls are made if you’ve ever seen them being made. I believe normal waffle makers work differently as the shape of the waffle “presses” the batter up into the gaps of the other side the waffle maker when the waffle maker is closed. The shape of the egglet waffle maker can’t allow for this as it has more circular dents in it than protruding elements.
It’s also interesting how you’ve served it with fruit and jam as I’ve never really seen it served that way here. Probably because it is more of a street food than a breakfast item. The egglets we have here come with flavours though! Like cheese or pandan or chocolate. They also add fillings to the egglets, something like how they add fillings to takoyaki, making it extra delicious. Maybe you can try it the next time you make these bubble waffles again! π π

You can use a grill frying pan (the pans that have sort of ridges that make grill marks on stuff), you just have to flip the waffle when one side is done (like a pancake!)
