One of my favorite cocktail combinations is anything with cucumber and gin! Today I'm here to share a delicious and refreshing recipe for cucumber lemonade. It's tart, semi-sweet, and super refreshing? You in? I'm in!
Here's the recipe:
3 ounces fresh cucumber juice
2 ounces gin
2 ounces simple syrup
Club soda

Just made this! I recommend peeling the cucumbers before juicing (it’s super easy, just like peeling carrots). I’ve put it in jars and I’m taking it on our spring break trip to Table Rock Lake down in your area! Yay!

I’m not sure if you have Hendrick’s Gin over there (it’s distilled here in Scotland), but it’s delightful and is fab with a bit of lemon, cucumber and tonic.
In the summer, I also add raspberries and a mint leaf.

How is it without gin? Gave up alcohol for Lent and was just telling my fiance that lemonade will be my go-to drink when out with friends while I eschew boulevard wheat.
Cucumber and gin is my FAVORITE. Anytime I see those two on a menu I know what to order- especially if Elderflower is included. 😀
