It’s good to have things to look forward to. For me, it’s usually my next mini vacation with Jeremy. But sometimes when those are too few and far between it works to focus on the little things like sleeping in and brunch on the weekends or our next big house project. And, on rough days when I need even more things to look forward to…there’s happy hour!
Close your ears if you’re from California or Texas (and all the other warm weather places), but it’s really realllyyyyy cold here right now. Not every single day, but on and off in a way that’s really a tease. Sometimes cold weather bums me out and for those days there are blankets… and mojitos! Let’s call it a game of pretend.
Ruby Citrus Mojito, serves one.
2 ounces white rum
Grapefruit simple syrup *recipe below
Juice of one lime
10 fresh mint leaves
Club soda
In the bottom of a tall glass add 6 mint leaves and a little bit of simple syrup. Muddle the mint leaves until they are crushed (and smell amazing!) Next, add rum, 1.5 ounces grapefruit simple syrup (you can add more at the end if it’s not sweet enough for your taste), juice of one lime, ice and top off with club soda. Stir and taste. Add more syrup if you like a sweeter cocktail and stir again. Garnish with grapefruit slices and fresh mint leaves. Enjoy!
*To make the grapefruit simple syrup, simply combine 1 cup grapefruit juice and 1 cup sugar in a small pan. Stir on medium heat until the sugar is completely dissolved. Refrigerate in an airtight container. Keeps for two weeks or more. Muddling is my favorite part. It smells so good! Deeeeelicous! It’s the perfect summer cocktail, but you can use it to fake warm weather vibes anytime you need to. xo. Elsie

Where do you get the straws?
I loveeeeee mojitos! We grow fresh mint during the summer and it’s awesome 🙂 Never had one with grapefruit. Definitely going to have to try! It’s super cold here in Buffalo too, so I totally get the bummed out thing. Dreaming of warm vacations…

Yum!! We make mojitos all the time, but have never tried grapefruit before. They look so beautiful and refreshing. I think I might have to track down those straws if I’m ever making them for a party. We had a blizzard yesterday and the whole city basically shut down, so I’ll have to make sure I have all the ingredients for the next snow day. – B X
This looks Delish! I’m pregnant and for some reason all of the drinks I keep seeing look so good haha! Pinning for a few months from now 🙂 also I’m in Texas and for us its cold too haha, we don’t do well with 30s and 40s here, come on spring!!
Only 9 degrees in Pittsburgh right now! I could definitely use a mojito.

Yep, it is alllllmost freezing here in central Texas so we are all in a panic (at least the media is trying to work one up). We are a bit spoiled by our winters but they help to make up for the summers. Sorry y’all are having so much cold but if you drink enough mojitos you won’t care.
I love mojitos and that looks so delicious and refreshing! I’m from Florida but I live in New York so I’m freezing!! I could use a warm sunny day and a citrusy cocktail.
This looks too pretty not to try!!! Lovely photos!!!

Mmm, yum! What a fun take on the traditional mojito 🙂
You’re killing me! This looks amazing! Marking this for a post-pregnancy cocktail for sure!
Oh how that would go soo well right now since it is negative 6 degrees here in new england!
And seriously LOVE those straws!!!
This drink is gorgeous! I’ve been getting a case of the January doldrums so this looks like a ray of sunshine.

Fantastic. My girlfriends are coming over tonight and I was going to make my old standby grapefruit margaritas, but now we can have two options! Citrus cocktails can make us alllllmost feel like we’re not in the middle of an arctic freeze.

I feel exactly the same way. When I want to embrace the cold, I love making hot toddies and snuggling by the fire. When I am in denial about winter, I make something festive like a French 75.
Here’s the recipe for a hot toddy: http://districtandmore.wordpress.com/2014/01/20/hot-toddy/

Delicious AND beautiful? Yes, please!!! As for the paper straws, I’m curious – do they get soggy fairly quickly? They are awesome!
