Did you know that I’m a big-time pudding lover? You might not guess it because you don’t see too many pudding recipes on the blog (except this rice pudding, which I still love). I’ve had many pudding disasters. I don’t know what it is, but puddings and custards are difficult for me. I’m still learning. 🙂 And that’s one reason I was interested in trying out chia seed pudding ever since I saw it in on Danielle’s blog. You just stir the seeds in and wait?! Does that really work?I was also worried that this might taste too healthy, if you know what I mean. I like that it’s super healthy for you, don’t get me wrong. But to me pudding is a dessert, so it’s gotta satisfy my sweet tooth. I check around for other chia seed recipes and really liked this one and also this one. And I figured if you can make a chocolate version, or if kids are loving this, then it must be pretty good. So, I gave it a try. Here’s how I made my versions.Vanilla Chia Pudding, makes one serving.
2 tablespoons chia seeds
1/2 cup coconut milk
1/8 teaspoon vanilla extract
a pinch of salt
1 tablespoon honey
In a small bowl or jar combine the first four ingredients. Give it a good stir and refrigerate for at least one hour. After the first thirty minutes give the mixture a stir, so it doesn’t clump together. Once you’re ready to eat, stir in the honey (add more if you don’t think it’s sweet enough) and top with your favorite fruit or chopped nuts.Chocolate Chia Pudding, makes one serving.

pinch of cinnamon
1 1/2 tablespoons maple syrup
In a small bowl or jar combine the first four ingredients. Give it a good stir and refrigerate for at least one hour. After the first thirty minutes give the mixture a stir, so it doesn’t clump together. Once you’re ready to eat stir in the maple syrup. I thought the chocolate pudding needed a bit more sweetener than the vanilla. Top with your favorite fruit or chopped nuts. I highly recommend pomegranate seeds and roasted almonds, but you do what you will.I had anticipated liking the chocolate version best. I’m a chocolate lover. But I actually preferred the vanilla. Despite its alien appearance. 🙂 If you’ve never tried chia pudding before, or if you’d like to find a slightly more healthy dessert option (even for you chocolate lovers out there), give this a try. It might surprise you. You can spice it up with pretty much any kind of fresh fruit or nuts to turn this snack into more of meal too if you like—hello colorful breakfast! Enjoy. xo. Emma

Ingredients

Recipe Notes
To make this chocolate simply add 1 tablespoon of cocoa to the ingredients before refrigerating.

I’m from the UK, so I’ve never actually heard of chia seeds, but from the quick look I’ve had on Google, they seem pretty cool. I have no idea if we have them over here, but it would be nice to give them a try. The chocolate pudding looks great!

The first one is similar to the overnight oats recipe I eat almost every morning. Most ingredients are the same, minus the oatmeal! Is it me or does it look extra yummy in the glass?

Looks delicious–I think I would try it with vanilla almond milk rather than coconut milk. The appearance of chia seeds has always made me wary, but I’m sure they taste delicious.
I absolutely loved the chocolate version! I added a bit more maple syrup, as well as a dash of cayenne, and topped the whole mess with strawberries and blackberries. It was a hit with both of the junk food-loving boys that I live with, even though it was healthy. Thank you so much for the recipes!

What can you use besides Coconut Milk, i’m allergic and was just wondering.
Does it have to be coconut milk exactly, like because of a texture thing? I’m just wondering if I can substitute almond milk instead; I hate coconut no matter how hard I try to like it. xP

You know what this is? This is NOT ONLY gluten free BUT ALSO dairy free. Which means ALL of my roommates can eat it. This is perfect.
It’s pretty much exactly like tapioca pudding except a little crunchy. They are seeds, after all!
I’ve never tried this type of pudding! You should try a bread and butter pudding. It is super easy to make, delicious, and uses up bread loaves that aren’t their freshest anymore 🙂

I was just reading all the comments because here in Uruguay i find it very hard to get coconut oil (there probably is somewhere but it ain’t cheap at all, im sure) so i wanted to know if it’d be cool to prepare this with regular milk or almond milk which is more affordable…
