It’s soup season guys. We recently posted about ten of our favorite soup recipes. And, it got me thinking. I really loved this asian style dumpling soup. It’s the dumplings, really. Love them. It kind of has the same effect as ramen noodle soup. It’s just warm, carb-y, comforting goodness. So, I decided to spice things up and play around with new flavors. What I love about making your own dumplings is you can cater them to your favorite tastes or dietary needs. We mostly eat vegetarian at our house, along with some seafood here and there. But, most store bought dumplings I can find in my area use pork as the main ingredient. By making my own I was able to switch out the pork for shrimp and use all fresh ingredients as well. Loved the result!Hot & Sour Dumpling Soup, serves 2-3.
For the dumplings:
1 package of won ton wrappers (you’ll only need half of them)
1/2 pound cooked shrimp, tails removed
2 cloves garlic
1 teaspoon grated ginger
2 tablespoons chopped cilantro
1/2 teaspoon sesame oil
1 teaspoon rice vinegar
2 teaspoons soy sauce
1 teaspoon worcestershire sauce
1/2 teaspoon sriracha (or more if you like it hot)
1/4 teaspoon red pepper flakes
Combine all the ingredients in a food processor and pulse a couple of times until well combined. Place a small amount of the shrimp filling in the center of a won ton wrapper. Lightly wet the edges with a little water. Then fold up the edges and press together. Try to remove any air from inside the won ton as you fill them. This will make around 20-22 small dumplings.For the soup:
1 cup dumpling water
3-4 cups Chinese hot & sour broth (or seafood stock/broth, or even chicken broth is fine)
1 garlic clove, minced
1 red bell pepper, sliced thin
1/4 cup chopped green onions
1/8 cup chopped fresh cilantro
soy sauce to taste
First cook the dumplings for 1-2 minutes in enough boiling salted water that they have enough room to float around and not stick together. Remove all the water except for one cup, add the broth and vegetables. Cook over medium heat just until everything is hot. Taste and add a little soy sauce if needed.Serve immediately. The dumplings will continue to cook as long as they are in the hot broth, so make this just before you plan to serve it. Enjoy! xo. Emma

Looks like this is a bit effort but I´m sure that it´s worth because this soup looks so yummy! And if I had not a rest from the pumpkin soup with ginger and steamed apples from yesterday, I would love to cook this soup as the first course for the dinner for my family tonight 🙂

It’s definitely time-consuming and a bit complicated, but you should try it with homemade hot & sour broth! Oh, sure, it’s kind of a “sunday dinner, had three hours to work on it” sort of thing but the taste is just 100% divine.
And homemade wontons are DEFINITELY where it’s at. Yum.

Swanson hot and sour broth uses a chicken broth base making it definitely not vegetarian. Just thought I’d let you know.

The idea is good, however, the execution is not. Honestly, making the broth from scratch probably wouldn’t have taken much more time than dumping in the sodium laden, ready made chicken-based broth that is not vegetarian or pescatarian. If you went through all of that effort to make the dumplings from scratch, you might as well make the broth from scratch too. Then you wouldn’t seem like a younger version of Sandra Lee (no offense).

My wontons came apart while boiling… What’s the trick?
This looks like a great, quick weekday meal
…but shouldn’t this be a Halfway Homemade post? I mean, the broth is from a box (you can make hot and sour broth using chicken or vegetable stock) and dumpling dough is super-easy to make and far superior in texture than store bought: it’s literally flour and water and a little time with a rolling pin. Not so much a “recipe” as it is a shortcut.

Wow! I didn’t know that Swanson makes a hot and sour broth! I will have to see if I can find it in my grocery store, because I love hot and sour soup!
Since I couldn’t find the hot and sour broth, I added:
1/4 c rice wine vinegar
1/2 t sesame oil
2 T Sambal Oelek
4 T soy sauce
4 c Chicken broth
Also…lazy me got mini chicken wontons from Trader Joes!
