Basil Lemonade Cocktail

Basil Lemonade Cocktail (click through for the full recipe)This past week our sweet pal brought us a bunch of fresh mint, basil and rosemary from her garden (thanks Laura!). Naturally, my mind went straight to cocktail recipes. I had wanted to try a basil simple syrup for a while and my ship had finally come in!

On a side note, my husband hates basil, but I love it. And today when he walked into the kitchen and smelled the syrup I was making, he was like, "What's that?! I want to try it." (insert my evil laugh here) I told him it was basil and he still kinda wanted to try it. And you know what? He liked it. I guess it's my lucky day! I never thought I could get him to love basil OR any mixed drink besides a Bloody Mary. He's an evolving man, what can I say? πŸ˜€

In a tall glass, mix 2 ounces basil simple syrup (recipe below), 1.5 ounces gin, 1 ounce St-Germain, and the juice of three lemons. Add ice and top off with club soda and stir. Stir chopped basil into the drink as a (flavorful!) garnish.  Enjoy!

Sugar

To make basil simple syrup, simply combine 1 part sugar and 1 part water in a pot and add 3-4 chopped basil leaves. I usually use 1 cup sugar and 1 cup water for a small batch, or two cups for a batch I want to use for a couple weeks or a party!
