You guys! I'm so excited about this cocktail! While it's certainly not a technical martini, think of it like a seasonal twist. 🙂 This is definitely a party drink—perfect for an Autumn dinner party! And I know you're probably wondering if it's as delicious as it sounds (it is!) and why I'm torturing you with a recipe like this on a weekday (sorry about that!).
The weather is finally cooling down here in Missouri. We're starting to see (a few) leaves turning orange, and I've already enjoyed an uncountable number of pumpkin lattes. We're feeling the Autumn spirit over here and hope you are too (unless you're in Australia—sorry guys, we're all backwards, aren't we?). Anyway, the time has come! Emma and I are planning halloween porch decorations, brainstorming ridiculous costumes (just you wait… oh my) and in general seeing the world though pumpkin-spice-colored lenses.
A lot of build up for a martini, no? Trust me. It's worth it.Pumpkin Cheesecake Martini, serves one
Vanilla Vodka (I infused my own with a vanilla bean)
Pumpkin spice syrup (recipe here)
Pumpkin pie filling
Half & Half
Vanilla extract
Ground cinnamon
Sugar
Jello cheesecake pudding mix
Whipped Cream
In a shaker combine 2 ounces Vodka, 2 ounces half & half, 2 ounces pumpkin pie filling, 1 drop vanilla extract, 2 tablespoons jello cheesecake pudding mix, a dash of ground cinnamon and 1 tablespoon pumpkin spice syrup (you can skip the syrup if you enjoy less sweet cocktails). Add ice and shake. Pour into a glass rimmed in cinnamon sugar and garnish with whipped cream (we found this awesome stuff called Whipped Lightning that is spiked—so fun!), a cinnamon stick and a sprinkle of cinnamon. Alcohol infused whipped cream sounds like the best idea ever. I really like that you guys used your same psl syrup. I made some pumpkin spice lattes, too, and ended up making Pumpkin Spice White Russians with it. They were really good, too.
Half of these thing you can’t get in Europe. Sound delicious though!
