Beets are not a vegetable I grew up eating. In fact, I'm pretty sure I never tried beets until I was well into my 20s. I'm a beet late bloomer.
That doesn't really make sense? I'm just saying I'm new to the beet game guys. I have figured out that I really like beets when they are paired with a sharp tasting cheese, like goat cheese or feta. So that's a big part of what inspired this salad. This is such a PRETTY salad. Use as many different kinds of beets you can find if you make this. The more colors the better.You could easily divide this salad among 3-4 people for a fancy dinner salad or appetizer. Espeically if you have any friends who haven't tried beets before. You should totally spring this on them. See what they do.Three Beet Salad, serves 1-2 as a meal and 3-4 as an appetizer.
3-4 beets
2 tablespoons olive oil
1 tablespoon red wine vinegar
1 tablespoons white wine vinegar
1/4 cup toasted sunflower seeds
1/4 cup crumbled goat cheese
salt + pepper
First we need to roast those beets. I like to wrap them in aluminum foil and poke a few holes on one side (same method for making baked potatoes). Bake at 425°F for 35-45 minutes. If you have smaller beets they will probably be done around 35 minutes, if they are larger leave them in for the full 45 minutes. Remove from oven and allow to cool enough so you can handle them. Scrub off the skins and cut into small pieces.In a bowl combine the beets, olive oil, and vinegars. Give it a good stir so that every piece gets coated in the dressing. If the beets are still warm, allow them to cool on the counter or in the refrigerator before serving.Place on a plate and sprinkle on the toasted sunflower seeds and crumbled goat cheese, season with salt + pepper. I added a few small slices of green onions. I'm fancy like that. Enjoy! xo. Emma

Beets brighten up any salad. I love it when foods have a mixture of colors, flavors and textures. I love adding arugula to sweet salads for that spicy kick. The foods of Vietnam always have a good balance between salty, sweet, savory, sour, and spicy.

YES! Please help spread the joy of beets! They’re so good when baked and are great in all veggie sandwiches with goat cheese. Plus I hate seeing people at the farmers market tear off the greens when other buy them, the tops are tasty as well sauteed with garlic. they taste kind of like spinach. sorry for my beet rampage, I’m a recent convert who is in love with the stuff.

That salad looks so good! I don’t think I have every had a fresh beet before, only the canned stuff. I am definitely going to try this out. I’ll probably watch an episode of the office too in honor of Dwight’s beet farm. I’ve heard he makes excellent beet salad as well. 🙂

Mmm I love beets! I’ve found they taste just as delicious boiled, and take way less time. They’re also really tasty paired with caramelized walnuts or toasted pistachios!
I love beets, but I never understand why recipes tell you to roast them whole with the skins on, if you are just going to peel off the skins later. I usually peel mine (making sure to wear an apron to avoid red beet juice spots), chop them, and roast in slices (or don’t roast at all, if they are sliced thinly enough). Just an idea!
I too am new to beetroots but this summer have eaten them with my lunch everyday! Having a little green grocers market stall around the corner from work and my flat is a god send! X Stephanie x
