Hi friends! I'm back on a huge salad kick! I think it's the sunny weather, but I seriously can't get enough. Here are three simple salads that I am enjoying right now!
This first salad is 1 bunch raw asparagus (you could steam it, but I like it raw) chopped into tiny pieces, 1 avocado chopped, 1 tomato chopped, 1/4 cup peas and 3 tablespoons mayo mixed in with some garlic and herb seasoning. This salad is so yummy, super fresh and healthy! I was inspired to try this from a salad I had at Workshop in Palm Springs. 🙂This next salad is kale, blue cheese dressing, peas, sliced tomato and blue cheese crumbles. So good!
I've also been making a kale and broccoli version of my spicy sushi salad. I've been adding cabbage and wasabi mayo and sriracha. It's so good and perfect for lunch!

I have a feeling I’ll be eating a lot of that asparagus salad.
I generally just toss some baby spinach, chopped tomato, and chopped avo with an apple cider vinegar & evoo dressing.

yum yum! I suggest trying a legit Greek salad (NO lettuce- just tomatoes, cucumbers, onion, sweet peppers olives, feta cheese and oregano all mixed with oil and vinegar. Perfection!) My boy friend has this thing for toasted walnuts and sweet corn in his salad, and I will never complain about that 🙂

Mmmm these look super tasty! I love making a salad with mixed greens (or spinach), pomegranate seeds, red onions, cherry tomatos, and goat cheese crumbled on top. Top with a little balsamic vinaigrette and it’s sooooooooo good!

Salad number one looks delicious! I’ve recently discovered avocado and LOVE it.
My favourite salad is anything with feta cheese and red onion in it. Try and buy feta in jars of oil with olives – I use a little of the oil as a dressing, I think it’s much healthier than mayonnaise. 🙂

I made my first kale salad last week and really enjoyed it, I put blueberries, mango and tomato on it with lemon and olive oil. I love any salad with mango and avocado, that’s my go, esp. with hearts of palm.

I’ve been putting mango and Navy beans into all my salads lately, and I top them all off with feta or goat cheese and some sunflower seeds! (I love pine nuts, but they’re just so expensive!)
Mmmm- the asparagus salad looks SO good! I will have to give it a try. I’ve been eating my favorite spinach, avocado, corn, garbanzo beans, cherry tomatoes, olives and LOTS of croutons with my fave balsamic vinaigrette dressing. I’ve been stuck in a rut- thanks for the suggestion!
These all look AMAZING! One thing though – it seems a little odd to call something with blue cheese dressing or multiple tablespoons of mayo “super healthy”!! Haha. They certainly look delicious, though!!
Do you have a Whole Foods near you? They carry a great variety of “no oil” dressings (found in the refrigerated section) that are really just purees (you could totally make them at home, but their display case is good for inspiration). They have a few such as fig balsamic, carrot ginger, and sweet onion with rosemary, all with no fat and minimal sugar. The pureed veggies and herbs make a great dressing with no artificial or processed ingredients that you can feel good about slathering on your salad!
Maybe you can write some DIYs on this topic? I have a bunch of whole food DIY salad dressing recipes that I love, and I’m sure you girls could come up with a bunch as well!

I’m going to be making my grandma’s broccoli salad soon – I’m still amazed at how ingredients that don’t sound like they go together at all make such a good salad! (broccoli, golden raisins, sunflower seeds, crispy bacon, and the dressing)

Oh wow, those salads look delicious. Sadly the weather in the UK hasn’t been too encouraging for salad eating recently. On one day the sun did shine, I tried out a recipe using watermelon, avocado and prawns with onion, garlic etc, and some rice vinegar. It was REALLY tasty. Fingers crossed for another sunny day to get to eat it again! And I definitely want to try out your recipes too.
For the top salad, how would you cook the peas? Steam or fresh?

Yum!! The best salads I’ve made are always just super simple/classic but my secret is caramalised balsamic vinegar…seriously incredible. And super versatile – goes really well over strawberries for dessert and amazing when you just cover chicken or pork with it and roast. A brand I use in Australia is Pukara Estate from the Hunter Valley. Thanks for sharing your salad recipes girls! xx

I made this super healthy/delicious salad the other day out of things I just had in the kitchen already…
Swiss chard, stems and leaves chopped
Crumbled goat cheese
Canned Tuna fish (1 can)
Homemade Dijon vinaigrette (1 TB dijon mustard, 1 TB apple cider vinegar, s&p, whisked together with some olive oil)
Delicious and easy!

My favorite salad lately is a super easy cold salad: grated carrots and small slices of red onion. I pour on hot oil with sautéed garlic, caraway seeds, paprika and a touch of cumin. Then sprinkle in some mint and parsley (then pop in the fridge until cold and flavors blend) and top with feta!
Cold, crunchy, creamy and perfect!
This looks incredible. I’ve been making a ton of salads too — I’ve been really into escarole lately. Also, mixing tunafish with one mashed up avocado — tastes just like tunafish with mayo…. but presumably healthier. That’s what I tell myself, anyway.

My favorite “special” salad is a scandic version of the ceasar salad! It includes romano leafs, cold-smoked salmon (or gravlax), homemade rye-bread croutons and a lemon-mayo-dressing with dill. Cheese is optional (the boyfriend likes edam cheese, i like mine without cheese).
