Did you ever think you’d see jello shots on the blog? Ok, ok, but hear me out. These are so fun! I’m a sucker for jello inside a citrus rind! Get me every time. My soon to be sister-in-law made these really cute blue jello in orange rind snacks for my nephew’s pirate themed birthday party. They were just jello, not jello shots. Just for the record. 🙂
I made these for a little get-together at my house last weekend, and they went over really well. These are the perfect amount of lime and mint, in my opinion. They are very fun and refreshing. Add the rum if you want, or leave it out and just enjoy your cute jello creations. Either way these are worth the effort it takes to make a batch. Here’s what you do:
This mojito jello shots recipe will make around 32 if using lime rinds. Recipe adapted from Food & Wine.
In a pot, combine the water and sugar over medium heat and stir until the sugar dissolves. Remove from heat and stir in the gelatin. Add the lime juice and 2 mint stems (with leaves). Allow that to steep for 12-15 minutes. Remove the mint stems and stir in the rum if using.
In the meantime hollow out your lime shells. This is probably the hardest part of making these. I used a small sharp knife to carve around the inside of the limes and then a melon baller to scoop out the centers. If the insides don’t look perfect don’t worry! Mine looked far from perfect. Be sure to leave the limes cut in halves until after the jello has set, then you can slice them into wedges.
Fill each lime shell with the jello mixture and sprinkle in some chopped fresh mint (from the remaining leaves on that 3rd stem). Place in the refrigerator and allow to set for at least 3 hours.
These are a fun little party trick! I think I’m going to make these ahead of time for the next camping trip I go on. I’m going to be that girl who pulls out a tupperware of jello shots. Ha! Oh well, at least they are the cutest and most delicious little jello shots. That ups the classy factor, right? 🙂 xo. Emma

I love the idea of using the rinds! My friends and I used to make jello shooters every year for our beach trips…I miss those days. I’m not sure what kind of booze we put in them but they were good!

I tried making some gourmet jello shots a while ago, but I just couldn’t get the proportions right. They kept coming out way too strong and I, quite defeated, ended up just using jell-o. This makes me want to try again!
I truly never expected to see jello shots on this blog (I, personally, am not a fan) – but these seem amazing, like an adult version of the predominantly high school/college kid classic… love it, and I plan on making these this summer!

I tried these with friends on the weekend. Delish! I recomend doing the carving first. It is the toughest part and you can use the lime juice in the recipe. It is a lot of work but they are delicious and very impressive to your friends!
