I just can't seem to put my ice cream maker up guys! This is cinnamon dolce ice cream. It's inspired by the Starbucks flavor and Biscoff Cookies. Does anyone remember when Delta airlines used to give complimentary Biscoff Cookies on all their flights. Man, those were the days.
If you can't tell, I'm a big cinnamon fan. This ice cream is a little different because it is made from ricotta cheese. This gives it a slightly different texture than custard based ice cream, and it's less sweet. Don't get me wrong. It's still ice cream (there's plenty of cream and sugar involved), but it's just a little more grown up. To me this is the perfect ice cream companion to an evening cup of coffee.
Cinnamon Dolce Ice Cream, makes about 1/2 quart
12 oz. ricotta cheese
1 cup milk (I used 2% but whole is even better)
1/2 cup brown sugar
1/2 cup sugar (regular/granulated)
1/2 teaspoon vanilla extract
2 teaspoons cinnamon
1/2 cup heavy whipping cream
Cream together the ricotta cheese and milk until smooth. Stir in the remaining ingredients and refrigerate for 2-3 hours (or overnight). Pour the cold batter in to your ice cream maker and follow the manufacturer directions for use.Happy ice cream making! xo. Emma

I just tried candied sweet potato ice cream this weekend and if cinnamon is your thing (it’s mine, fo so), it’s a flavor profile totally worth trying.

Have you ever tried Trader Joe’s cookie butter? It tastes like those cookies, only in a peanut-butter consistency (but it tastes nothing like peanut butter). These are Belgian cookies. 🙂 They’re called Speculoos. I love them! They put them in everything here in Belgium. You can even buy pastries at the bakery that are made with little bits of these cookies. They’re delicious with coffee or tea, too.

What brand and type of ice cream maker do you have? That ice cream looks like the perfect consistency. Does your machine require you to freeze the ice cream after you make it to harden it up?

Jennica Bridgman- I have a kitchen aid ice cream maker, it’s an attachment to my kitchen aid mixer. I love it a lot. It depends what kind of ice cream I am making. This particular recipe turned out pretty firm straight out of the mixer but most of the time the consistency is more like soft serve ice cream so then I do usually freeze it for a bit longer to get that perfect scoop consistency. 🙂 Good luck!
