Have you tried green smoothies? They are healthy and refreshing. I love making them for breakfast. The great thing about green smoothies is that you can add a lot of green to your diet without eating salad. I love salads, but sometimes variety is good! I’ve also known a lot of people who don’t like salad who love green smoothies! They’re a treat!
1 lime
coconut milk
1 granny smith apple
baby spinach
yogurt
ice cubes
optional: mint leaves.
Directions: For the green layer, mix 2 cups spinach (2 giant handfuls works), 1/2 cup coconut milk, 4 ice cubes, 1/2 a granny smith apple (chopped) and the juice of 1 lime. Blend together and add to cup. Rinse your blender and then combine 1/4 cup coconut milk, 1/2 cup yogurt (green yogurt or vanilla yogurt work great), 1/2 a granny smith apple (chopped)ย and 2-5 fresh mint leaves if you like mint! Blend, add to your glass and garnish with an apple slice.
Note: This smoothie is refreshing and a little tart. If you like your smoothies extra sweet, try adding a teaspoon of Truvia to each layer before blending. Spinach is the easiest green to blend in a sweeter smoothie, but if you don’t mind the “green” taste try baby kale next time!

Ohh I love this! I’ve ben really curious about putting spinach and kale into smoothies but it sounds amazing with green apple! xo

I have my problems with green smoothies, but this one sounds really delicious.
I started a green smoothie challenge today (I’ve previously had smoothies with spinach – do love them!). I’m bookmarking this one for when I’ve run the gamut of the ingredients I have at home right now. (Personal suggestion – green grapes. Combined with pineapple there’s a tasty zing.)
looks and sounds delicious! We juice a lot and make green smoothies but have never tried this combo before.
thanks!
Love green smoothies. I’m thinking of supplementing a meal (maybe breakfast?) with a smoothie and see how that goes. the documentary “Fat, Sick, and Nearly Dead” is really interesting!

Looks good! I love how they layer. I’ll have to try this soon!
This looks splendid! A great way to start the day, except my lazy bum wouldn’t want to blend it up. Still ill give it a try cause im sure its delicious!

Ooooh I love smoothies with apples in them. This one sounds delightful. I make them with kale, apples, and mint but never coconut milk. Looking forward to trying this.
Mmmm I love spinach and lime! ๐ Two of my favourite ingredients and so pretty, can’t wait to try this. Thanks for sharing.
I’ve never tried apple in my green smoothies, but it sounds like a treat. So much green, so much nutrition – great for my winter cold!

I love green smoothies! I usually use berries or peaches with spinach, but I’ve always got a fridge full of pretty green apples, I’ll have to try that out!

It’s so nice to see a green smoothie recipe without kiwi fruit! I’m allergic to it, and it seems like most green smoothies in stores have it in there to cut through the bitterness of the leafy greens. The apple and lime must taste so good!
i really really need to formulate a more healthy breakfast habit. I’m so bad! I like the addition of coconut milk here. Makes it seem more tempting.
I’m gonna try this, although I’d need to add some protein powder to help pack on a few pounds. This looks so good!
OMG, WHAT adorable pictures. I’m completely in love! thanks for the inspiration ๐

I’ve just tried it (I replaced the coconut milk with cow milk). It was de-li-cious โฅ
Thanks for the suggestion!
I just had a green smoothie! I didn’t make it though, got it at one of my favorite little shops in my home town called Sol Botanicals.
That looks good! I wish I had a blender, sighs. Smoothies are way too expensive to buy at a smoothie bar but they’re actually so easy to make. I think I’ll buy one soon ’cause it’s multi-functional. Lovely recipe, Elsie, love the greenness!
OOHHH I cannot WAIT to try this. I love smoothies, but I’ve never tried “green” ones. Thanks for the idea!

How long will these keep? If I make it before I got to bed, will it still be good to drink for breakfast?
Meghan,
I would make it at the time you plan to drink it. You can freeze the ingredients in bags if you want to save time! XO. elsie
This looks really good! I want to try it out! xx

I shall be making this, this very weekend! Thanks so much for the post and the amazing pictures!
I love green smoothies and drink them often! I can’t wait to try this recipe. This one sounds so good! One tip I’d like to share is freezing your diced fruit for a couple of hours before adding it to the smoothie. This way you can leave out the ice (because the frozen fruit will keep it cold), and the smoothie doesn’t dilute any if you like to sip on them for a while.
Thanks again for the recipe!

Gorgeous!! Gotta love a green smoothie. It just feels healthy ๐

Looks like a perfect alternative to the green juices I started drinking recently for breakfast! Thank you for a wonderful idea!
May I suggest coconut water rather than coconut milk? Water has about 43 calories and 0 fat compared to 360 calories and 33 grams of fat in the milk per 8 oz serving! The water is sweet and provides you with electrolytes. I also like frozen pineapple rather than ice to sweeten and chill.
Thank you for posting this! I drink a smoothie for breakfast almost everyday, and this week (for one reason or the other) my fridge is OVER full with greens, so much I’m afraid half will go bad before we get to them. Now I know what to do with them!
Marie
This smoothie looks so delicious! I was wondering though….why do you blend up the greens and the yogurts separately then add them to the glass? Is there a reason why I shouldn’t just throw it all in the blender?
Thanks!
Ooh, yummy! I make a very similar smoothie a few times a week, except I add banana. It gives it a nice extra kick of sweetness and helps mask “greener” greens like kale.
Wonderful post! Green juices are incredibly delicious and are even easier on the digestive system in the morning. I usually juice kale or chard, parsley, an apple (or pear), ginger, cucumber, and celery, and it’s such a refreshing way to start the day.

Is there any particular reason you guys use coconut milk over regular milk?
Sounds interesting but yummy! xx

Yum! This looks so scrummy. I really really don’t like salad. I like everything that goes in it… but lettuce is just awful. I’m always looking for alternatives!
Everyone’s making green smoothies now we’re in January. I’ve never made one before but the green is really tempting ๐
Love how you’ve presented it for the photos too. Can’t go wrong with a lovely green apple, yum!
This looks brilliant! I usually start the day with muesli, but I have a feeling smoothies are going to be added to my breakfast rotation pretty soon… perhaps with a bit of muesli on top, just for comfort’s sake ๐

As a regular juicer and an avid vegetarian gone vegan, just want to say I love that you brought this into the mix. People don’t realize, until they start juicing, how much energy they are going to have! This looks yummy, can’t wait to try it:-)

Because of your awesome recipes, I tried my first green smoothie, with kale, blueberries and banana and it was oh so yummy. I even got the hubby to drink it and he actually liked it, said it was different but good. Thank you much!
Green apples-check. Spinach-check. Love it all, so I guess I’ll be trying this smoothie!
Ok, now I feel bad about eating my egg, bacon bagel this morning .. lol
Monica.
I am just drinking this smoothie, and it it really delicious!I love how the two layers slowly mix together while drinking
Oh holy moley, that looks good! I am trying this tomorrow! Been wanting to make green smoothies and this looks really really good. Thanks for sharing!

Just made this… Amazing even with a few ingredient changes! Awesome idea!
This looks great! I usually make protein shakes once a day. I want to try this its so different from what I normally make.
Has anyone actually tried this yet?
i made my first smoothie last week, and i highly recommend it! i used kale, spinach, ginger, apple, cloudy apple juice and a tiny bit of honey. was incredibly refreshing.
How fancy and coincidental – I just shared my version of a green smoothie earlier this week! I assume your smoothie is for any time of the day, whereas mine is specifically a breakfast one so I took into account how the ingredients should be pro-alkaline since you wake up with an pro-acidic stomach so you need to equalise it or you’ll get tummy issues!
Omg…so I was listening to “A Beautiful Mess” by Jason Mraz, and I just so happened to click on this page while looking for pictures of smoothies…and my jaw dropped when I saw the name of the site! I love when these things happen <3
I made this, it was tasty but it came out really frothy, and sort of separated… Any advice on why this is happening and how to fix it? This doesn’t normally happen with my banana or berry based green smoothies.
Karen- try adding the spinach first next time. That can help them blend better.
Sorry that it didn’t turn out perfectly! I’m not %100 sure what went wrong, but I hope it’s better next time! ๐ XO- elsie
