Brussels sprouts are my food soul mate. For the longest time, I never tried them. I didn't exactly turn my nose up to them. I don't really remember very many times I saw them being served. But of course, I didn't go out of my way to try them either. I mean, why would I? Brussels sprouts and lima beans are the food villains of children's books and movies. Everybody knows they are gross. Duh. But then I got this cookbook, and I saw an easy recipe for brussels sprouts. And the rest is history—it was love at first bite (no, I'm not embarrassed of that pun—love does that to you).Since then, I've tried brussels sprouts many different ways. It's a favorite of the boyfriend and me. I really want to try a different version for Thanksgiving. I'm thinking of trying this recipe. But here is a snack idea! Easy, quick and super good for you.Brussels Sprout Chips
Needed: brussels sprouts, olive oil, sea salt and a lemon.
First separate each leaf. The smallest leaves won't separate so you can either go ahead and cook those too or save them for another meal idea. Lightly coat the leaves in olive oil. Bake at 400°F for 8-10 minutes until edges begin to get crispy. Be sure to keep an eye on them, as they can burn quickly. Remove from oven, squeeze on some fresh lemon juice and sprinkle with sea salt. Happy snacking! xo. Emma

one of my fav recipe with brussels sprout is:
slice the brussels (not cooked!raw) in thin slices, and toss them with lemon juice and olive oil-add some parmesan or pecorino cheese- and some pinenuts or hazelnuts!healthy salad:)
Brussels sprouts are my favorite, too! I wish they didn’t take so much work to prepare, because I can’t get enough of them.

I grew up in the tropics, so I don’t have any childhood brussels sprouts horror stories…I tasted them for the first time at age 19, during a year in France, and was immediately smitten! These days in the Netherlands I blanche them and finish them off with a little blue cheese and some roasted almonds.

This recipe is great with kale as well! I bake at 375 and sprinkle some parmesan on for the last couple of minutes.

I can hardly believe that I’m reading this post right now–I made these just last night (I like a couple cloves of chopped up garlic added to the mix and I add the whole sprouts to roast with the outer leaves). Every time my boyfriend walked past them on the baking sheet waiting to be served, he would grab one of the toasty leaves and gleefully exclaim “CHIPS!” before popping them in his mouth. He’d never called them Brussels Sprouts Chips before, so you guys must’ve had an intense mind-meld last night 😀

At 25 I just started eating brussels sprouts! Its true, its a new love affair. I say, the crispier the better. I pan fry mine to pretty much burnt, and it makes them smell like burnt popcorn. But that might be just me, I love burnt popcorn. And now I love burnt brussels sprouts.
Baked them in the oven (in Holland we normally cook them) a few days ago and they tasted really good! But this a great snack idea!

Mmm… I’ll be trying these for sure. I think i’m brussels’ biggest fan! My family refer to sprouts as “little pockets of fart” but even they like them tossed with bacon lardons, onions and walnuts.
I have never tried brussel sprouts either but I always felt bad for them because they always got a bad rep but in reality I think they are cute, like mini cabbages. Same with lima beans, I think they are a cute shape! I will have to save this recipe to try someday!
I laughed when I read your brussels sprout love story. It’s clear that brussels sprout chose you over me. I’m a vegetarian and I eat any – I mean ANY – veggie. Except for the brussels sprout. I don’t know what it is, I mean, I eat all kinds of beans and cabbage, but this one… no 🙂

omg i love brussel sprouts!! they have been one of my favorite veggies since my mom started stir frying them w/ dried shrimp when i was a kid. now i oven roast them w/ bacon and shallots every thanksgiving, it’s become a tradition.

Okay, those look fab. I will make them pronto, as I too love brussels sprouts. However… my all-time favorite brussels sprout recipe (or really just method, I guess) is Mark Bittman’s Roasted Brussels Sprouts. You sauté them in a pan on the stovetop until they’re browned and getting crispy, then pop ’em in a blazing hot oven to get them to a melty, crispy, shockinglyamazinghooray state of goodness. Seriously. They’re THAT good. You should try ’em, whether for thanksgiving or just whenever you want veggie yumminess. Also a healthy alternative to chips. and its exactly the same recipe.. i prefer to season my kale chips before baking them, that way theyre seasoned.. maybe thats just my OCD, LOL.. but they’re supposed to be cooked at 350 for 10 mins. and like these you have to watch so they dont burn. LOVE them. i could eat a whole 2 pound bag from wegmans this way hahahaha
