As you know, I've made it a goal to cook more soups this season. Elsie thought it would be fun to create a few sister soup and sandwich pairings. I tell her a soup, and she pairs it with a sandwich. She tells me a sandwich, and I pair it with a soup. Easy! And by the end of it we've come up with different combinations you could mix and match for an easy and delicious lunch or dinner. Here are our pairings:Pea Soup with Spicy Three Cheese Grilled Cheese (soup makes 3-4 servings).
For the soup you need: 3-4 tablespoons olive oil, 1/3 yellow onion, 1 tablespoon minced garlic, 3 bay leaves, 1 can chicken or vegetable stock, 1 bag (16 ounces) frozen (and thawed) peas.
In a medium-sized pot, saute the diced onion and garlic over medium heat until onion has softened. Pour in stock and add bay leaves. Allow to simmer for 5-6 minutes so the bay leaves can infuse their flavor into the stock. Remove leaves and add peas. Cook until softened. Then use an immersion blender to puree (or work in batches with a blender or food processor).One trick I learned recently for great grilled cheese sandwiches is to coat the outside of your bread with mayo instead of butter (or oil). This might sound sort of weird, but it results in a very crispy delicious sandwich. Try it! The three cheese we used for this sandwich where pepper jack, cheddar and mozzarella.
Easy Tomato Soup, makes 3-4 servings
Needed: 3-4 tablespoons olive oil, 1/3 red onion, 1 tablespoon minced garlic, 1 can whole stewed tomatoes, salt and pepper to taste. And maybe a little fresh basil to garnish.
In a medium-sized pot, saute the diced onion and garlic in oil over medium heat until the onion has softened. Add tomatoes with their juices and cook until warmed through. Puree with an immersion blender or in batches in a blender/food processor. Add salt and pepper as needed.
We paired this sandwich with a baked tuna melt. Simply pop an open face tuna melt in a hot oven for a few minutes until the cheese has melted. I love using different kinds of bread on sandwiches, it can really add a lot more variety to your favorite standβbys. Here we used a croissant roll. Other fun bread options might be sourdough, rye or pumpernickel.

Emma- add about 1/2 cup peanut butter to your tomato soup and a touch of cayenne. AMAZING and you get some protein.

We have been eating lots of soup lately too! Tonight was homemade cream of celery (made surprisingly delicious using low fat condensed milk instead of cream). And last night, it was similarly prepared Cauliflower Soup. So good and nourishing! I’m going to try your tomato soup and I love the idea of using mayo to make grilled cheese sandwiches.

That pea soup looks gorgeous. Oo and will have to try the mayo tip… My favourite soup is curried Parsnip that my mum makes, it’s so delicious. I prefer to have nice fresh bread with butter or toast whatever bread/roll I’ve got lying around rather than a sandwich. Simple but so warming and perfect for Autumn/Winter x

My father-in-law taught me the mayo trick. He owned a series of restaurants and that’s what he always used when making grilled sandwiches.

There’s a really good vegetarian sandwich, it is provolone cheese, cucumbers, tomatoes, mayonnaise, alfalfa sprouts, and lettuce.
We tried the cheese sandwich with mayo on the outside instead of butter and they were delicious!! So crispy too. Thanks for the tip.

My grandma has always used mayo on her grilled cheeses, so even though I hate it in any other food combination, I always use mayo on mine! It is incredibly delicious.

I always seem to have loads of carrots at home and I never know what to do with them. Soup usually comes to my mind but I never know what to do! π
Since I was a little kid we’ve always made grilled cheese by putting mayo on the bread. My friends always thought it was strange, but the result is so much better than butter or oil! So happy that you’re sharing that idea with others!
