Guys, I think it's pie season. Every magazine cover I look at seems to have a pie (or two or three) on it. This proves a few things: 1. I apparently only read food magazines. 2. It's pie season. I've already started making my list of possible pies I'll be baking for Thanksgiving this year (I'm way early, I know). But man cannot live on pie alone. A great and lighter alternative is baked fruit. You still get to enjoy all the delicious fruit flavor without quite so much butter, sugar and crust. Here are a few of my favorites.Baked Peach Parfait, makes 4 servings.
Needed: 2 peaches, 1/2 cup oats, 1/8 cup olive oil, 1/8 cup maple syrup or honey, a few pinches of cinnamon, and a handful of chopped pecans.
In a small bowl, combine the oats, oil, sweetener, cinnamon and pecans. Stir, making sure every oat is coated in oil and sweetener. Slice peaches in half and remove pits. Fill with oat filling and bake at 400 F for 15-18 minutes, until softened and the skin begins to pull away from the fruit. Garnish with whipped cream.Baked Grapefruit, makes 4 servings. This is great for breakfast or a light dessert!
Needed: 2 grapefruits and a conservative handful of brown sugar.
Slice grapefruits in half and remove as many seeds as you can. Begin to segment the grapefruit—this will allow the sugar to soak in even more. Sprinkle with sugar and bake at 400 F for 16-18 minutes.Baked Apples (or "Opposite Apple Pie" if you're feeling clever, and I AM), makes 4 servings.
Needed: 2 apples (I like Granny Smith), 1/4 cup brown sugar, a few pinches of cinnamon and 1/2 sheet of puff pastry.
Core apples and slice in half. Coat the inside with brown sugar. Slice up the puff pastry into thin strips and create a lattice design over the apples. Sprinkle with a little more sugar and cinnamon. Bake at 400 F for 16-18 minutes until puff pastry is golden brown, and apple has softened. Serve with vanilla ice cream! As you can see these are super easy to make but also really cute and delicious. Impress your next dinner party guests with this sweet pie alternative. Happy baking! xo. Emma

Yum yum emma! I like the selection… You know I just wanted to throw it out there but it would be awesome if you could make a forest pie. My grandma use to get them all the time and I never can find one. They usually contain all kinds of goodness like rhubarb, black, blue and raspberries… and apples and strawberries… ughh it’s the ultimate goodness. Let’s just say I wish I was better at cooking 😉

I really want to try making those mini baked apples!
These look delicious! I’ll definitely be having the grapefruit for breakfast soon. When I make baked apples, I usually core the apples and then stuff them with raisins and brown sugar, but the crust over the top here is super cute!
Yum this receipe looks so good and easy too! I think i might try it out on my grandparents this weekend. Thankyou x
Those look amazing! Especially the little baked apple pies. Might have to try those!

Wow! I am eating mine as I type this! I modified my recipe just a tad because I didn’t have all the ingredients. I took the peach recipe and used apples (no puff pastries :[ ) and used almonds instead on pecans ( didn’t have those either!). I also added a pinch of brown sugar along with the above ingredients. Wow, it is simply delicious and refreshing. Thank you for sharing!
This is so exciting! I’m for sure going to be making all 3. =) A much healthier alternative to pie!
Wow, those pies make me drool! 🙂 Amazing pics!
Oh wowww! that looks amazing! 🙂
That is so cute! love the little apple pies!

I love that little intro… “Every magazine cover I look at seems to have a pie (or two or three) on it. This proves a few things: apparently only read food magazines”. I can’t get enough of pies, but I like the inside out apple pie idea. Makes a nice change.
Happy pie-making!

Emma, these are genius, not to mention beautiful! Definitely trying this… thanks for sharing. xxx, j
These sound so yummy! Emma, which brand of puff pastry do you use? I bought some to try your peach puff pastry dessert a few weeks ago, and it didn’t quite turn out. It’s probably just the cook. 😉 However, in the off-chance it’s not me, it might have been the brand. Thanks!
I didn’t know that you can bake grapefruit too. Great! I also bake apple quite a lot but with much more simple way: apple topped with cinnamon only. The taste is quite amazing and I can reduce the amount of sugar 🙂
One more thing, you guys aren’t only creative with crafts but also with food. How amazing that is!

These look like the most delicious things I will ever eat in my life. And make no mistake, I will eat them. I just don’t know which one to try first…
I’d be curious to try the grapefruit – I like the grapefruit flavour, but find them too bitter when they’re raw. I think the baked version could be very tasty. And the apples are so cute!
OMG – these all look so wonderful and nutritious! LOVE!

YUM!! Can’t wait to try these out 🙂
Love your recipes – will be trying baked grapefruit for tomorrow’s breakfast! And love your photos!!!!!!!!
Emma, I am improvising your baked peach recipe with a pumpkin, will let you know how its turns out, so far it looks promising 🙂
Thanks for the inspiration…
Really impressed! Everything is very, very clear, open is a description of the problem. It contains the information.
I have never tried baked grapefruit – sounds good! I need to try that one out :).
Omigod, I just made something similar to this the other day! I saw your previous wrapped baked fruit entry, but puff pastry isn’t readily available here, so I looked around my kitchen and decided granola was a good replacement. I halved an apple, removed the core, sprinkled it with sugar, cinnamon and clove powder, then filled and covered it with the granola. I added a wee bit of milk and maple syrup to make it a bit more moist and baked it in a toaster over (ha!)for 15 minutes. yum!
Baked apples: yummy!
That looks super yummy and definitely easy to make. I will be trying it this weekend!
Those inside out apple pies look awesome!!
That baked grapefruit looks really fantastic!

mm baked grapefruit? I’m intrigued!

Yummy, they looks delish.
And super easy as well, so double-bonus!
Baked grapefruit is an awesome winter breakfast, especially topped with a little cinnamon and a squeeze of lime juice.
Hahaha! I totally have also started my Thanksgiving pie list! I’m thinking, apple with olive oil crust, pumpkin cream, and derby.
I love this idea! I made apple pie once from scratch that was super successful, but since moving out of my college dorm and back home (where the oven is broken) I’ve been deprived of pie making! These baked fruit “pies” seem completely possible in my mini toaster oven and even if the fruit is undercooked… so what? It’s fruit! :]
I’ve made the baked peach recipe three times now, once using a nectarine instead. It is such a wonderful, delicious treat. Thank you for the great recipe!
I love this! My family is coming over for dinner next week and these would be perfect.
Grapefruit! I’ve never thought to bake them! I usually just sprinkle it with a little Truvia, but I will try this!
Yumm! Great alternative to fattening and heavy pies!
http://thevintagelibrary.blogspot.com/
I NEED to remember this! It looks great.. it looks delicious! Beautiful pictures too!
I love how easy these three “pies” look to make. I don’t look my pies to crusty as it is so this is just perfect.
Yum this looks really good. The baked apple looks amazing!
Yum-O! This morning I made the baked grapefruit with 1tsp truvia, and 1tsp brown sugar. Amazing, and healthy. At about 65 calories for my breakfast… I am thrilled. 🙂
I actually have the pink grapefruit all of the time, but I’m too impatient to eat it so it doesn’t look that great when I try it!
