I've been receiving so many beautiful tomatoes in my CSA delivers lately that I've been trying to come up with more easy recipes to use them up before it's too late. Confession: I like easy recipes. Don't get me wrong, I'm a big fan of difficult, involved and time-consuming food experiments too. But, dude, I work a lot (I bet a lot of you do too). Sometimes you just need any easy dinner+dessert idea that can be ready in 30 minutes or less.One item I keep in my freezer is puff pastry. You can make your own (maybe this should be a kitchen basic article some day?) or you can simply buy it. You can make anything from cinnamon rolls to savory tarts with a sheet of puff pastry. Here I made a simply tomato tart for a the main course and a quick peaches and cream one for dessert. All in under 30 minutes. Here's how:For the tomato tart I used half a sheet of puff pastry. I smeared on a few tablespoons of homemade pesto (recipe later this week!) and layered on a few slices of fresh mozzarella and a few thinly sliced heirloom tomatoes. Then I drizzled on just a little olive oil and a sprinkle of salt and pepper. The mozzarella was pre cut before I bought, and it was a little thicker than I would have preferred. This resulted in a very cheesy tart, which was still very delicious. I baked this at 375 F for about 20 minutes, until the crust was golden and puffy looking.For the peaches and cream tart I also used half a sheet of puff pastry (so one sheet makes dinner and dessert for two people!). I layered on slabs of cream cheese, fresh peach slices and then generously sprinkled with cinnamon and sugar. Bake at 375 F for 18-20 minutes.I like to bake on parchment paper, making clean up as easy as these recipes. Leaving plenty of time to unwind after an a quick and delicious dinner. xo. Emma

I vote yes on the future puff pastry article! I love using puff pastry and would love it even more if I could make it from scratch. My favorite thing to do with it is to cut it into triangles and make little turnovers(savory or sweet)with it, which are perfect to take for picnics, etc!

I made this for dinner and the mozerella and tomatoes made it super liquidy. I poorer the liquid off and put it in the oven for longer but the dough never really set. Any thoughts on where I went wrong? I still love the idea of it.
love this idea!! luckily I had some puff pastry left over from a bacon and egg pie I made… I altered the ingredients though. tomato paste (had no pesto otherwise would totally have used that! red onion and crushed garlic, spinach, feta cheese, cherry tomatoes, pine-nuts, a dash of olive oil, and salt and pepper. YUMO!!! will def make again xxx
