I'm not normally a salad person. All my close friends know this about me; I'm just not that into salads. BUT. Lately I've caught myself eating more and more salads. I think it's the weather. Super hot days do not inspire brilliant baking ideas. Roasted anything sounds just too hot for a later summer lunch. So I've been experimenting with different salad dressings and this one is probably one of my absolute favorites!
Sweet Ginger Dressing, makes about 1 cup. Recipe adapted from here.
Needed: 2 tablespoons fresh grated ginger, a heaping 1/3 cup peanut oil (or vegetable oil), 1/3 cup rice vinegar, a scant 1/3 cup honey and pinch of salt and pepper.
Add all ingredients to small jar, place the lid on and shake well. Store left over dressing in the refrigerator for up to a week.

Mmm! Ginger dressings are so good – one of my favorite salads is a stir-fried broccoli tofu mixture over greens and tomatoes with a ginger miso dressing…I think even a non-salad gal like you would love it!

I tried the “Whiskey Ginger Recipe” the other day to get rid of my flu (don’t know if it worked, but it was fun making it all:). And the ginger syrup I had left came to use today when I decided to make popsicles. Ginger syrup + apple juice + blueberries is and awesome combo!
