Pink Lemonade Cupcakes makes 22-24 regular size cupcakes
For the cake batter: 2 1/2 cups flour, 2 cups sugar, 2 teaspoons baking soda, 1/2 teaspoon salt, 2/3 cup oil (canola or vegetable), 1 3/4 cup water, 1/2 teaspoon vanilla extract, 2 teaspoons vinegar, juice and zest from 1 lemon.
In a bowl mix together all the dry ingredients (flour, sugar, baking soda, salt) and zest. In a separate bowl combine the wet ingredients (water, oil, vanilla extract, vinegar and lemon juice). Slowly stir the wet ingredients into the dry until just combined and no lumps are left in the batter. Pour batter (this will be very wet batter) into lined baking cups, 2/3 full. Bake at 350 F for 20-22 minutes, or until a toothpick inserted in the middle comes out clean. *Optional- add a few drops of red food coloring to the batter to make it pink!
For the frosting: 2-3 sticks of softened butter, 1 1/2 to 2 cups powdered sugar, juice from 1/2 lemon (OR 1/2 teaspoon lemon extract) and a few drops of red food coloring.
With an electric mixer, beat the softened butter until creamy. Slowly add in powdered sugar, mixing and scrapping down the sides of the bowl as you go until you reach your desired sweetness. Add in juice (or extract) and food coloring and mix until frosting… well… looks like frosting. Pipe it onto cooled cupcakes and enjoy!

I just made these tonight and they tasted AMAZING! Such a perfect blend of the sweetness cupcakes require with the succulent sourness (if that’s a word) of lemonade. And the pink coloring was such a cute touch! The rest not eaten tonight by my family are just sitting beautifully (and tantalizingly!)on the counter. I tried them today ! Me, my sister and my dad LOVED them ! I made both cupcake and coating pink but because of the heat in the oven the cupcake somehow changed to it’s normal colour. Very weird. Still coating looks really lovely and the tast is DELICIOUS ! Looking foreward to more sweetness ! Tankyou ! ^^

Ugh, I tried making this recipe TWICE and it is a dud! Cupcakes are totally gross. Very pretty in the picture but I wouldn’t feed these to, well anything that is living… Don’t waste your time.
We found that the frosting was just a tad too butter-y…so I would suggest starting with one stick, or doubling the powdered sugar and the lemon, otherwise it’s a bit overwhelming. Other than that, it’s a great frosting!

Hey girls! Amazing blog you have here, I love it! I’ve tried a few recipes you’ve posted and they have all turned out amazing. But try as I might I cannot make this one work! I was wondering if you ever had any trouble using it and if so, what did you do to remedy the problem? I’m using veg. oil and filling the cups about half way. Did this twice and the batter just spills over and bubbles up everywhere. I really want to make these because I’m sure they are fabulous. Like everything here 😉
