Nutella Sandwich Cookies

Hello there A Beautiful Mess readers, I'm Emma, Elsie's sister and the gal behind Food Coma. At Elsie's wedding last week I had the opportunity to try Nutella for the first time. Now I'm obsessed.

So I've been trying to dream up different ways to use this magical new-to-me spread and I thought that in between two cookies might be the perfect place for Nutella.

Along with on top of toast. Like, every morning.

You can enjoy these cookies in the late afternoon along with some coffee or in the evening with some milk while watching the latest episode of Glee. (That's right-I'm a Gleek, and I'm not sorry!)

Nutella Sandwich Cookies, makes 10-12.

Ingredients: 1/2 cup softened butter, 1 cup granulated sugar, 1/4 cup brown sugar, 1 egg, 1 teaspoon vanilla extract, 2 cups flour, 1 teaspoon (aluminum-free) baking powder, 1/2 teaspoon salt and plenty of Nutella.

Cream together the butter and sugars, stir in egg and vanilla. Now mix in flour, baking powder and salt until just combined. The batter should be crumbly and you will probably need to use your (clean) hands to combine it a bit more to form a dough ball. Cover in plastic wrap and place in the freezer for 20 minutes.

Now form into small round disks, about 2-3 inches in diameter and uniformly thick. You want your cookies to all sort of match each other in size because you will be placing one of top of another to form sandwich cookies. Bake at 350 F for 15-18 minutes, allow to cool completely on a cooling rack before adding filling. Once cool, spoon a couple of tablespoons of Nutella on one cookie and place another on top. Devour, and don't apologize.

  • Yum. There are all sorts of magical nutella recipes on pinterest lately… make your own nutella, and then use it to make brilliant cookies (like these!) or fill doughnuts, or add to brownies… it’s addicting!

  • In Lucca (Italy) I had a thin, crepe- style pancake with nutella in the centre. Lovely , except the girl had put so much nutella in it was sickly. Once I had removed about half a jar, it was divine. I have always loved nutella and on a bad day a teaspoon is just the most perfect sweet treat!! I also love a drizzle of warm nutella on vanilla icecream. Maybe I should get out more!!

  • Nutella is AMAZING with those Pepperidge Farms flat-bread rounds. I ate those every day when I was in Ireland.

    Have you tried it with bananas? Best thing is to make a slit in the banana with the skin on and put a couple of teaspoons of nutella in the middle. Wrap the whole thing in foil and bake in the oven or place on the bbq.. best thing ever!

  • Ahahah! So happy you’re in love with it! As an italian I can say that we enjoy it almost in everything such as bread, cookies or croissants…even if I usually taste it on my fingers 😉

  • Nutella has been feeding generations here in Greece (well before that we had Merenda which is local and just as good but Nutella grew sooooo big). It’s our favorite topping for crepes (thin pancakes) either with crushed almond/biscuit (p’tit beurre kind) or banana bits… The latest one we call it Chocobanana. Either or Nutella is divine!

  • These look so good! I have sworn off Nutella forever after having eaten it for 2 months straight on a backpacker’s budget, but perhaps I will break that to make these. Random fact of the day: Nutella is to Europeans what peanut butter is to North Americans. It’s almost impossible to find peanut butter overseas!

  • Hey, I made this recipe and GOSH!!!!!!!!!! People were fighting to get the last “sandwich”…My friends and family loved it so much!   • In Italy we call those beauties ‘Baci di Dama’ translated in English it is Lady Kisses. Nutella is also italian, seeing people around the world liking it makes me so proud.

  • Don’t worry, there is Nutella in the USA – even at Costco! My daughter makes a “Reese’s Sandwich” as an occasional treat – peanut butter and Nutella.
