I love a good hot toddy. The flavors can be quite complex, but still a sort of light and refreshing cocktail. I love a good creamy drink now and again as well, but max flavor that’s still light and easy to drink is the tops!
I also think a good hot toddy (or any hot drink, for that matter) can act as both a drink and a hand warmer. A major bonus when, like me, you have chronically cold hands November-April. Ha.
This hot honey toddy, like the name suggests, utilizes hot honey for both heat and sweetness. I was telling Elsie and Laura about this and I was surprised that neither of them had heard of hot honey. Have you heard of it? I guess I’ve seen it in a few cookbooks and we also serve it at The Golden Girl Rum Club with wings, pizza, or other dishes. I personally love it on pizza. 🙂
You can make your own hot honey or simply buy it. Either way, it’s useful in both this hot toddy recipe as well as all sorts of dishes you might want to spice/sweeten up at home. It’s certainly not one of those weird ingredients you buy and use once and then can never figure out what to do with after that. I’ve bought MANY things like that before (and if I’m being honest, probably will again), but hot honey is not one of them. It’s so delicious you’ll be putting it on everything!

Hot Honey Toddy
Ingredients
- 2 ounces bourbon
- 1/2 ounce hot honey
- 1/2 ounce lemon juice
- top with hot water
Instructions

Add the bourbon and honey to a mug. Top with hot water and give it a good stir, to dissolve the honey. Then top with lemon juice. Serve garnished with a lemon rind or wedge, optional.
Recipe Notes
To make your own hot honey, combine 2 large dried chilis and 1 teaspoon red pepper flakes with 12 ounces of honey over low heat. Cook for 30 minutes, then allow to cool. Remove the large chilis and store in a container with a lid. If you want to strain out the red peppers you can, or you can leave them in.

Honey is such a great ingredient!
Something small that can make a big impact in the long run: we can all try to buy the honey we need from a local beekeper who works in a sustainable way. I guess there are certification systems for this in the U.S., too.
