I’ve been meaning to give myself a kick up the backside and start eating healthier this year (although that hasn’t exactly happened yet, save for the amazing porridge recipe I found), and these recipes have definitely inspired me again. Not that the cake was attracting me the most or anything.. But the kale and potato hash looks amazing, as does the pea and pesto quinoa patties. So excited to try some of these!

My mom makes quinoa stuffed pepper all of the time and they are amazing! She sometimes switches it up with brown rice of buckwheat and they’re always a hit. One recipe I want to try is the cauliflower crust. I’ve seen it all over Pinterest and the blogging world, but I have yet to try it. Perhaps I’ll make it this weekend!

First of all, your cauliflower pizza looks awesome! I tried making one once and I thought it was gross, but it also looked nothing like yours…surely I did something wrong!

Its so, so good. Plenty of sweet peppers and spinach, plus yummy potatoes and eggs. I use cheese on it, but of course you don’t have to.
