Anytime Cookies

Sometimes you just need a cookie, right? It could be unexpected company you want to impress, a bad day, a good day, or a fun activity for yourself (or some kiddos in your life). My personal favorite excuse is if you happen to be visiting your sister—that’s enough excuse for me to bake a batch of cookies. Ha! With summer winding down you probably want something quick and easy too, so having an easy recipe on hand is key, and that’s the inspiration behind these cookies.

We are excited to be partnering with KitchenAid for this post, Elsie recently got a Mini Stand-Mixer in the brand’s color of the year, Bird of Paradise. Maybe you saw me showing off the 5-quart version of this mixer? Well, the mini stand-mixer is just as pretty and can still make up to 5 dozen cookies in a single batch so it was perfect for this recipe!

This is the first year Kitchen Aid has done a color of the year collection and we just love the fun and vibrant shade they chose! It’s super cute in all their appliances like their mini food chopper, hand blender, blender, hand mixer and the 5-quart and mini stand-mixers. Too cute!

So about these cookies. 🙂 Essentially this is a great cookie dough base. Think chocolate chip cookies but without the chocolate chips. You can mix in all sorts of different things based on the seasons or what you may have on hand. You can bake a batch right away or freeze to use later.

One mix-in idea we love is chopped up cookies like Oreos. The mini food chopper is perfect for this kind of add-in because of it’s multiple speed settings for coarse or fine results. Plus it’s light and compact so it doesn’t take up too much counterspace. Use cookies to make more cookies? Yes, I think there are times this is called for. 🙂

Here are some other mix-in ideas we love:
-Golden Grahams, Chocolate Chips, and Mini Marshmallows
-Mini Peanut Butter Cups or Chocolate Kisses
-Sprinkles!!!!
-Chopped Nuts (especially love macadamia nuts with white chocolate chips)
-Dark Chocolate and Potato Chips
-Crushed Cookies (like Oreos)

You really can mix in ALL sorts of delicious things to make any kind of cookies you like!

Then just bake for 8-10 minutes at 350°F and you’re ready for dessert! These are great to make to bring to a party, for an at home movie night, or an outdoor event. We especially love the s’mores version we made (Golden Grahams, chocolate chips, and marshmallows) and it just feels like the perfect end of summer treat!

Anytime Cookies

Servings 12

Ingredients

  • 1/2 cup softened butter
  • 1/2 cup white sugar
  • 1/4 cup brown sugar
  • 1 teaspoon vanilla extract
  • 1 egg
  • 1 cup all-purpose flour
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon salt
  • 1 to 1 1/2 cups mix in ingredients see post

Instructions

  1. In a KitchenAid stand mixer, cream together the butter and sugars. Then add the vanilla extract and egg and mix until combined. Then add the flour, baking powder, and salt. Mix until a soft dough forms. Stir in your mix in ingredients. Cover and refrigerate for 1 hour or overnight.

  2. Spoon onto a baking sheet with parchment paper or a baking mat. Bake at 350°F for 8-10 minutes. Then gently remove to a cooling rack.

Recipe Notes

If you don't plan to bake your cookies within a day or two you can freeze the prepared dough for use later.

    Just like any sane person, I’ve always adored KitchenAid’s products, but now that I know they can make FIVE dozens of cookies in one batch, I HAVE to have one! Then I’ll never be cookie-less!

  • I won’t deny it, cookies are my absolute favorite! Chocolate and potato chips sound so different to be in cookies but they are SO GOOD! Definitely adding this recipe to my collection!
