Flatbread is a great snack to start a party. Once you have the dough ready you can top these with anything your imagination can come up with. These are slightly different from pizzas because I don't typically use sauce and I add less cheese than a pizza. This makes them a lighter version; perfect as a starter for a evening of entertaining guests.
Flatbread dough, makes two servings.
Needed: 1 cup warm water, 1 teaspoon sugar, 2 1/2 teaspoons active dry yeast, 3 cups all-purpose flour, 1 3/4 teaspoon coarse sea salt and 4 tablespoons olive oil.
In a small bowl dissolve the sugar in the water. Pour in the yeast, but don't stir. Just allow it to bubble for a few minutes. In a large bowl combine the flour, salt and oil. Pour in the water and stir until dough forms. Knead for 3-5 minutes until dough becomes elastic-like. You could also do this is a mixer with the dough hook attachment. Place the dough ball in a lightly oiled bowl, cover with plastic wrap or a kitchen towel and allow to rise for 1 hour. Divide into two and knead for 2-3 minutes more, place back in the bowl (or two bowls if needed) and allow to rise for another hour. Now you are ready to roll your dough out and bake at 350 F for 7-8 minutes until nearly done. Top with your choice of toppings and continue to bake for 4-5 more minutes.
For this flatbread I choose to smear on a little plum jam, provided by Blue Chair Fruit, then I added a chopped apple, fresh basil and feta cheese. I love the combination of fruit with feta; sweet and sharp! I'm a big feta fan. Get experimental with your toppings and find what you and your family like best. Enjoy! xo. Emma

i’ve been eating pizzas from trader joe’s for dinner these last several weeks. it’s usually accompanied by a bowl of brussel sprouts and mayo. sometimes, with some caesar salad. but i really should change it up a bit. instead of pizza, perhaps some flatbread — this recipe is a great place to start. it looks so yummy!
