Yogurt and granola is probably what I eat for breakfast about 60% of the time. That makes it the majority, I guess. It’s not just any old yogurt and granola either. Oh, no. It’s gotta be Greek yogurt, preferably with fresh fruit or jam and a little honey. I like all sorts of granola, and I LOVE making it at home because you can easily makeย a big batch to last you a couple weeks.
This granola is inspired by one of my favorite quick breads: banana bread. It has small pieces of crunchy dried bananas and plenty of spices to give it flavor. If you’ve never made homemade granola before, I highly recommend you give it a try. It really could not be easier, and having a big container of homemade granola sitting on your kitchen counter is total street cred in the cooking world, if you ask me. ๐
Banana Bread Granola, makes about six cups.
4 cups old fashioned oats
1 cup chopped nuts (I used 1/2 cup walnuts and 1/2 cup pecans)
1/3 cup olive oil
3 tablespoons melted butter
1 teaspoon salt
1/2 teaspoon cinnamon
a big pinch of nutmeg and ginger
1/2 teaspoon vanilla extract
1 cup chopped banana chips
You’ll note there’s not a bunch of sugar in the ingredient list. I think it’s easier to add honey or maple syrup to your morning breakfast rather than add it to the granola itself. Or if you prefer to buy yogurts that are already sweetened, then this granola won’t overwhelm you with sugar.
In a large bowl, combine the oats, nuts, salt, and spices. Pour the oil, melted butter, and vanilla extract over the mixture and give it a good stir so everything gets coated.ย
Spread the mixture out onto a baking sheet lined with a baking mat (Silpat) or parchment paper. Bake for 20-30 minutes at 350ยฐF. Every 10 minutes or so, remove the sheet from the oven and give the granola a stir. This will ensure that no pieces get too burnt while other pieces don’t cook at all.
After the granola is done baking, remove from the oven and toss in the chopped banana chips.ย
Store in an airtight container for at least a few weeks (probably longer). Enjoy! xo. Emma

I’m going to be honest here… I have a HUGE phobia of bananas. SO me saying ‘ooomg so making this’ would be a little lie. I will name this MINUS the banana, and add something else delicious, I’m thinking strawberries! Its such an odd fear but my sister and I have it haha.

This looks amazing! I love granola recipes. I usually add a little tablespoon of peanut butter to my yogurt and granola {weird, but SO good}, and this recipe with bananas sounds like that combination would work perfectly! Thanks for sharing, ladies! ๐

Yes – I am definitely trying this!
I love any recipe that I can make with things I already have in my pantry so I am all about this. And you’re right, serious street cred with it sitting in a pretty jar on your counter.
I am so anxiously awaiting your book to reach my door step. I just bought a house and have held off decorating until I get my hands on it!
Delicious! Please and thank you! Beautiful pictures. ๐
That looks delicious!

Mmm, this sounds delish! I’ve seen a lot of recipes in the past for homemade granola, but they’re all the same. This one actually sounds more fun and like having it for breakfast would be a great way to start the day! Yum!

There is nothing like fresh homemade granola smell…its an instant air freshener, hee hee. Love this combo, especially the baked banana chips, yummm.
Do you own a dehydrator? I can imagine what awesome creations you can come up with dried fruits and veggies ๐
I LOVE making homemade granola. And my boyfriends kids love it too, bonus! The banana chips are a great addition. There are so many options when it comes to granola, keep ’em coming!
This looks delicious! I love banana bread, so I’ll definitely be trying this ๐

I love banana bread and so wanna try this. You could go all fancy and even make a banana parfait with this yummy looking granola. You can never go wrong with bananas topped with more bananas. Pinned for later.
This sounds gorgeous – I love the idea of using banana bread spices!
Wow, this looks really delicious!!
This looks delicious! I can’t eat yogurt without the granola.. thanks for the recipe! ๐
yum! seems like a really versatile recipe — you could sub banana chips for any dried fruit, right?
That looks so yummy! I also love granola and yogurt for breakfast and will have to try out this recipe! Great post!
Granola is so tasty! Have you considered swapping out the olive oil for coconut oil? Mmmm, I love anything with a coconut-y taste!
I love bananas so i’ll give this a try ๐
This looks like such a healthy yet tasty breakfast. I’m trying to eat healthier so I think I might give this a go ๐

my favorite type of granola
Eeeek, this looks too good, Emma! xoxo, Sarah
Mmm this looks lush. Will give it a go. I’m trying really hard to add more oats and nuts to my diet. Loveing it so far and feeling the benefits.
I know a few anti banana folks, it’s cool. ๐ I’m not a massive fan of eggplant, so there you have it.

Sounds perfect. A little peanut butter makes everything better. ๐

Thanks for buying our book! And best of luck with your new home decor dreams!!! What an exciting time.

I don’t! Elsie used to have one and it was fun gadget.

Banana chips! That’s what’s missing from my granola.
Thanks for the reminder. Once my oven is fixed I’ll be sure to give
granola making a try ๐
Yes, you could easily change out the fruit for any dried fruit you like. The granola itself is spicy with the cinnamon, ginger and nutmeg so I would pick something that you feel compliments those flavors.

You read my mind! I have it on my list to experiment with coconut oil next. ๐

hmm, already taste very good in my head ๐
this sounds so good!

Are the banana chips homemade or store bought? I would love to make some but do not have a dehydrator!
Yum! I just shared a recipe for low cal banana bran muffins, must be that time of year.
I always make our granola because my husband is allergic to nuts (poor guy), and he loves my granola more anyway (http://girlnamedallyn.wordpress.com/2014/05/27/the-best-nut-free-granola/). I need to add some banana chips to my next batch though! Looks so good.
Yummy.

Yum! I love yogurt and granola for breakfast!
I’m not a fan of bananas either! I was thinking of just omitting them though because I love all of the nuts in the granola! Yum!

I usually don’t like anything that has bananas in it but I thought I would give this a go and it was actually really good! My whole family devoured it so I’ll have to make more!
Yummy! I love granola & (Greek) yogurt!

Yum! I’ve been weary of greek yogurt for some time – but the added textures of banana and granola might be what I need to get into it. Thanks for this!

I love making homemade granola, not only does it give you cooking street cred, but it’s so much cheaper! And you can make it to taste or crunchiness. This looks delicious and I love the idea of adding dried banana. Mmmm now I’m hungry, thanks Emma! ๐
I just made this granola this morning with rolled quinoa instead of oats and coconut oil instead of olive oil/butter and it turned out super delicious! Also, made the whole apartment smell like banana bread:) If anyone else is going to use rolled quinoa reduce the cooking time by about 5 minutes as it cooks faster (is smaller than oats) and would burn if left in the full time as in the recipe here with oats.
Wow, this looks fantastic! I also love the idea of adding sweetener to your breakfast, not the granola – how much sugar I am craving definitely varies by the day.
I have cravings now. Thank god it is time for a snack ๐

Thanks for this, totally going to try this! Always looking for new breakfast recipes ๐ XO
This looks amazing! I’ve been on the lookout for a granola recipe to try, and I love how it’s sugar free too, as I’ve been trying to cut down so this is perfect! ๐
Sound delish! What should I use instead of butter for dairy-free granola?
You could either use all oil (I often do this) or try a dairy free/vegan “butter” like Earth Balance.
-Emma
Does this give you a chewier or crunchier granola? I love crunchy granola! I tend to burn mines trying to get it the texture I like. Haha.
Hi there,
Do I add ready to eat roasted/cooked nuts or raw ones to pop in the oven for this recipe please? I’m still a noob in the baking department so pardon me please! Thank you ๐
i like my granola kind of chunky. does it stick together well without honey added before baking?
I love granola, and I love a healthly granola even more! It’s great there is no sugar! Would coconut oil work instead of olive oil?

Looks delicious! I am always looking for new granola recipes. This one incorporates all of my favourite ingredients – thank you! Cant wait to try it ๐
I tried your recipe today but to my taste there is way too much salt in there. I only took one coffee spoon and not even a tea spoon but still it tastes like salted peanuts. Next time, I’ll just use a pinch of salt. That will totally suffice.
I really can’t stand yoghurt, it literally makes me feel sick!! Any ideas or alternatives? Is there something else I can eat with the granola?
I always wondered how you got oats to granola, thanks! This sounds amazing, like seriously amazing.
