Birthday Cake Cookie Butter

The first time I had cookie butter was a life-changing experience—a spreadable cookie?? Yes, please. Cookie butter is also fun because you can make it and gift to friends in cute jars for birthdays or special occasions. We showed you guys how to make cookie butter from any cookie (Oreo cookie butter is preeeeettty amazing), but I thought it would be fun to make a version that tastes like you’re dipping right into a birthday cake, and holy cow, is it good! Sprinkles are definitely not optional on this one …
Birthday Cake Cookie Butter, makes 1 1/2 cups

1 1/2 cups sugar cookie crumbs
1/2 cup funfetti cake mix
2 tablespoons butter
1/4 cup sweetened condensed milk
2 tablespoons evaporated milk
sprinkles

Place your sugar cookies into a food processor and blend until you have fine cookie crumbs. Pour your crumbs into a bowl and add your funfetti mix. Stir to combine. Melt your butter in a saucepan and add in your condensed and evaporated milk and let them meld together. Pour into your crumb mixture and stir until combined. Place cookie butter in fridge until cooled.Once your cookie butter has cooled a bit, mix in as many sprinkles as you like (the more the better) and it’s ready to eat! Cookie butter should be stored in the fridge in an airtight container (if you have any left to store!).I was pretty sure this would be good, but, WOW! It’s kind of out of this world, if you ask me. You are free to eat this however you want (straight off of a spoon is amazing!), but I like to dip pretzels in it or it would be delicious to spread on strawberries as well. If you have this stored in the fridge, it will firm up a bit so just give it a few minutes on the counter to warm up to a softer spreadable consistency.
