If you’ve ever had the honor to help host a baby/wedding shower for one of your friends, you know how tough it can be to think of the perfect treats to serve. I’m all about healthy eating and getting in my green juice and smoothies when I can, but when I go to a party or shower, I want the junk food to flow like wine if you know what I mean. A few years ago when I hosted a baby shower for my friend Candace, I was looking for something that would not only taste delicious, but also look adorable on the treat table. I knew I had found the answer to my prayers when I came across this birthday cake popcorn recipe online, and if I thought it looked and sounded good just by the photo and name, my expectations were exceeded once I actually tasted it. IT’S CRAZY GOOD!
Birthday Cake Popcorn, makes 6 cups.
Taken from Tasty Kitchen’s Birthday Cake Batter Popcorn
1 1/2 cups melted white chocolate or almond bark
1/4 cup vegetable shortening
1 1/2 cups white cake mix
6 cups of popcorn
1/4 cup sprinkles
Melt the chocolate or bark in a microwave safe container for 30 second intervals (stirring each time) until melted and smooth. Add the vegetable shortening to the warm chocolate and stir until combined. Add the cake mix into the chocolate/shortening mixture.
Pour the popcorn into a large bowl, pour the warm chocolate over the popcorn, and stir until evenly coated. It helps to use two spoons to toss the popcorn like you are tossing a salad. A sweet, salty, delicious salad.
Pour the popcorn onto a cookie sheet covered in wax paper and immediately coat in sprinkles before the mixture hardens. Once the popcorn is totally cool, you can store or enjoy! The popcorn should stay good for a few days in an airtight container.
This stuff is ah-MAZING. It’s basically like popcorn and Lucky Charms cereal had a delicious baby together. I love how the sprinkles add an extra punch of colorful fun, which, of course, is what every good dessert table needs, right? This is also a great choice for showers and parties because you can serve it in individual little popcorn boxes or even hand out in bags to be the party favor that guests take home. Although, with this popcorn being as good as it is, you may have to keep an eye on your guests and make sure they aren’t stealing more than their allotted share! xo. Laura

You can also use the homemade master cake mix recipes too in place of store bought. (I may be on a bit of an extreme sugar high after starting my experimentation, sorry to babble. I was sent the link by a fried – who is hoping I make several kinds for her upcoming party and in the testing and tasting I may well have consumed more sugar today then I normally ingest in several weeks, if not a whole month. It would appear sleep is something I won’t see for a few days, but totally worth it! Super tasty and utterly gorgeous.) I think I will make a giant rainbow effect using this popcorn as backdrop for the containers of other treats for the party!
I just made this and am waiting for it to dry – it looks so yummy! A few notes for those of you who are making this at home:
I tried to double the recipe and ended up having to pop up 36 cups of popcorn (!!) The amount of batter I made by doubling the ingredients was enough to sextuple (is that a word?) the batch amount. So be prepared with some extra popcorn handy while you’re making this, just in case!
I ended up making this with the kids I work with, and they loved it. it was a hit!!!!!!
