Black Bean Tortilla Soup

Tortilla soupI usually lean more in favor of creamy soups. It doesn't have to actually have cream in it. It could be completely vegan, I just like a smooth soup. But every now and I again I do love a good black bean soup. It's sort of like a cozy burrito. (Wait, is that weird? Forget I said anything.) This soup is certainly cozy and a fantastic quick dinner idea. Bonus: it's vegan and manages to be pretty healthy while still very flavorful.Vegan tortilla soupBlack Bean Tortilla Soup, makes 2 servings
