There’s a bar in town that has the very best fries. They put brown sugar on them. Genius. If you’re a Springfield local and you haven’t tried JOB’s fries yet, you totally should. But if you’re not local, or you don’t feel like leaving your house, then you could just make these instead.
These are the best homemade baked fries. So, so good. How ever many you make in your first batch, you will wish you had made more. But of course, your waist line might not. So… don’t say I didn’t warn you.
Brown Sugar Baked Fries, makes 2 servings. Slightly adapted from here.
3-4 small potatoes (I used Russet)
4 tablespoons oil (I used olive)
2 teaspoons salt
1/2 teaspoon black pepper
2 tablespoons brown sugar
First peel and rinse off the potatoes. Cut them into fries. Try to keep them as uniform in width as possible, otherwise the super thin fries will cook too much while super thick fries will not cook all the way. Plunge the cut potatoes into warm water and let them soak for 20 minutes. Drain and lay them out over a bed of paper towels and pat dry.
Coat a rimmed baking sheet with 3 tablespoons oil. Sprinkle on half of the salt and pepper. In a bowl coat the now dry potatoes with the remaining 1 tablespoon oil. Lay them out on the rimmed baking sheet in a single layer. Sprinkle on the remaining salt and pepper. Cover with aluminum foil and bake at 475°F. After 5 minutes remove the foil. Continue baking for 10-12 minutes then rotate the pan. Continue baking for another 10-12 minutes. Then use a spatula or tongs to flip each fry. Sprinkle on 1 tablespoon of brown sugar and then continue to bake for another 10 minutes. Remove the fries to a bed of paper towels, to remove excess oil. Sprinkle on the remaining 1 tablespoon brown sugar just before serving.
If you make these then you gotta make burgers. It’s a must. But you will probably fill up on fries. Or at least I did. 🙂 Enjoy! xo. Emma

UMAMI burger, a chain here in L.A has the best sweet potato fries. There secret is brown sugar on top. Since the first time we had them we added that when we make them at home. Yum!
