I’m not always a savvy or adventurous diner. I have my go-tos. The dish I probably order most often is caesar salad. I love the flavors and no matter where you are, most caesar salads taste pretty similar. So you know what you’re in for. Like anything you order/eat often, you start to develop strong preferences about little things (or is this just me?). For example, I really don’t like it when caesar salad is made with anything other than romaine lettuce. It makes no sense really. I love spinach, kale, etc. But I just want romaine.If I’m going to get all picky about it I figured I better learn to make my own favorite version of this classic salad. This is really yummy and would make a fantastic lunch to make office buddies jealous or as an impressive starter to a multi-course homemade dinner. Or you could make it and then eat it by yourself while standing in your dirty-dish-filled kitchen. I’ll just let you guess which of these I did….Anchovy Croutons (because every salad should start with bread, right?)
1/3 loaf french bread
2 tablespoons oil drained from the anchovy package
1 tablespoon olive oil
2 tablespoons finely grated Parmesan cheese
salt + pepper
Cut up the bread into bite sized cubes. Coat in the oils. Sprinkle on the cheese and salt + pepper. Bake at 350°F for 6-8 minutes until crunchy. Caesar Dressing
3-4 cloves garlic
2 egg yolks
1 tablespoon dijon mustard
5 anchovies
1/8 teaspoon red pepper flakes (optional)
3 tablespoons olive oil
salt + pepper
In a food processor puree together the garlic, egg yolks, mustard, anchovies and red pepper flakes if using. Slowly drizzle in the olive oil while the processor is on low. Taste and add salt + pepper as needed.Assemble your salad and add as much dressing and croutons as you like. Sprinkle on a little shaved parmesan before serving. Enjoy! xo. Emma

Caesar salad is my favourite salad of all time, it is the best salad ever in my opinion. I love it so much, and your pictures are making me want one so bad!!!
I would have never thought of using the oil from the fish for the croutons, it’s quite a cool idea, may have to do it sometime 🙂

Yum! I love Caesar salad. My father in law has a pretty amazing Caesar dressing recipe that I make all the time…no egg. This looks great too and I love the crouton idea!

I agree. I think caesar salads are a classic and usually never fail to disappoint, especially if they use anchovies. I went to a Japanese restaurant that made their fusion recipe with wasabi instead of dijon mustard and they added sashimi. It was delicious!

A ceaser salad without romaine lettuce, simply isn’t a ceaser salad. The dressing is one of my favorite for any salad, and I actually am a big fan of anchovies!

Instead of throwing the heel of the bread away I have been cutting it up and tossing it with olive oil and Cavenders Greek seasoning. Cook it and up and they are the best croutons. Just thought I’d throw my two cents in! YUM!

I hate anchovies but I know my mom would love those.
I’ve started having grilled romaine…. you brush it with some olive oil, salt and pepper, then put it on the bbq for a couple minutes. Then drizzle caesar dressing on top. It’s so good!

My little brother used to be EXTREMELY picky. The only vegetable he would eat was romaine lettuce with Caesar dressing. One night I made the dressing from scratch, anchovies and all. He loved it and had no idea he was eating fish. I really like the idea of using the anchovy oil to make the croutons!

Those croutons sound delicious! Anchovies in the dressing is a new one for me. We also add blue cheese or Gorgonzola cheese if we have it…adds a great richness and depth.
