Carrot and Ginger Salad Dressing

Carrot and ginger dressingMaking your own salad dressing just makes sense, right? What you're wanting is a fresh and light salad, so why not make your own totally fresh dressing too?

Yeah. Makes sense.

Carrot ginger dressing (click through for recipe)This dressing combines sweet carrots with the bold flavors of ginger and lime. It could not taste more like summer. Yum. After snapping these photos, I immediately made an even larger salad and had a super healthy lunch. 

And in case you're curious, yes, those are chopped-up wasabi peas on top of this salad. It's a game changer.

Carrot ginger dressing ingredientsCarrot and Ginger Salad Dressing, makes about 1 1/3 cups.

1/2 cup carrots
1 1/2 tablespoons ginger
juice from 1 lime
2 cloves of garlic
1 tablespoon sesame oil
3 tablespoons rice vinegar
1 tablespoon soy sauce
1 tablespoon honey
1/4 teaspoon red pepper flakes
1/2 cup safflower or peanut oil

Peel and chop up the carrots. Grate the ginger. Toss everything but the safflower (or peanut) oil into a food processor and puree.

Carrot ginger dressingNow, with the food processor running, use the top opening to slowly pour in the oil. This will help the dressing to combine well. Taste and add a little salt or pepper if you like.

Carrot and ginger salad dressingStore any unused dressing in an airtight container in the refrigerator for up to a week. Happy salad days to you! xo. Emma
