You’re in for a treat today because I’m sharing these filling, spicy, cheesy, black bean burgers. If you’ve always assumed that veggie burgers have to taste like healthy cardboard, then you should try this because they will for sure change your mind.
🙂
They are also insanely easy to make with basically a handful of pretty simple ingredients. Have I convinced you yet???
Cheesy Jalapeño Popper Black Bean Burgers, makes two large burgers (or possibly three if you want to make them a bit smaller)
1 large jalapeño (around 2 oz.)
3 cloves of garlic
1 can black beans (15 oz.)
1 teaspoon salt
1/2 teaspoon onion powder
pepper
1 egg yolk
1/4 cup flour
2 oz. Colby jack or cheddar cheese
2 teaspoons cornmeal
1 tablespoon olive oil for cooking the burgers in
burger buns and other burger fixings
First make the burger patties. Chop the jalapeño into small pieces, removing the seeds and stem as you do (you can leave a few seeds if you like more heat). Mince the garlic. Cook the jalapeño in a little oil over medium heat until it begins to soften. Add the garlic and cook another 45 seconds to a minute, until very fragrant.
Drain the beans from the can juices and place in a medium size mixing bowl. Add the jalapeño and garlic mix, salt, onion powder, and a sprinkle of some pepper. Now remove about 2/3 of this mixture to a food processor or blender and puree until mostly smooth (it doesn’t need to be perfectly smooth like hummus, just mostly). Add this back into the mixing bowl with the remaining bean mixture and stir in the egg yolk. Then stir in the flour until a thick batter forms. If the mixture appears too sticky, you can add another tablespoon or two of flour.
Cut the cheese (he he… sorry, I’m super mature) into two squares. Divide the batter in two and press into patties with the cheese in the center. Sprinkle on a little cornmeal and wrap in plastic wrap to freeze or refrigerate if not using right away.
Cook in a little olive oil over medium heat for 3-4 minutes on each side, until the patty looks well browned but not burnt. Toast your buns, and you’re in business!
You can serve these alongside chips or, my favorite, fries! I still love these brown sugar baked fries I shared years ago. Or for a little more nutrition, you could make these sweet potato fries.
-You can swap out the all-purpose flour for whole wheat. You may need a little less if you do as it will likely absorb more liquid.
Happy veggie burger making, you guys! xo. Emma

OMG yummm! When I first saw the photo it reminded me of the burger from Grad School in Springfield, YUM!
I always get black bean burgers when we’re out and I see them on the menu, but I’ve never thought to make them on my own! These look amazing!

I’m definitely going to have to try these out. They would probably be perfect with a little guac on top. But I think guac makes all black bean burgers better.
Mmmm I’m at work right now after having a pretty sad (and light) lunch. This looks so good and is making me SO HUNGRY.

Genuinely confused as to how so many people are saying these look good?? I’m a vegetarian and love things like this usually, but I guess the lack of ~food styling~ and photography make them look more dry/bland then what they’re actually like. I’m just trying to be constructive with my feedback, so please don’t take it the wrong way!
Wow, that looks so delicious! I’ve never tried a black bean burger, now I definitely should!

I think they look delicious BECAUSE of the fact they’re simplistic with an easy recipe attached to them! It doesn’t require complex food styling to “doll ’em up” since they look good enough on their own/ shows to a T what they’re all about.
I love the sound of this and seeing melted cheese just generally makes me happy! 🙂

I made these the other night and they were fantastic! We added freshly chopped onion and it was the perfect addition. Great recipe!
I’m thinking a little corn and some chopped cilantro added in would make these really good, too!
Don’t forget: beans are the “musical fruit.” You should always rinse canned beans to get rid of all that unwanted gas! Just look at all the bubbles that will be rinsed away rather than ingested! Keep rinsing until the water no longer looks bubbly.
