Cheesy Jalapeño Popper Black Bean Burgers

If you’ve always assumed that veggie burgers have to taste like healthy cardboard, then you should try this because they will for sure change your mind.

Jalapeno Popper Black Bean Burgers (via abeautifulmess.com) They are also insanely easy to make with basically a handful of pretty simple ingredients. Have I convinced you yet???

Black bean burger ingredientsCheesy Jalapeño Popper Black Bean Burgers, makes two large burgers (or possibly three if you want to make them a bit smaller)

1 large jalapeño (around 2 oz.)
3 cloves of garlic
1 can black beans (15 oz.)
1 teaspoon salt
1/2 teaspoon onion powder
pepper
1 egg yolk
1/4 cup flour
2 oz. Colby jack or cheddar cheese
2 teaspoons cornmeal
1 tablespoon olive oil for cooking the burgers in
burger buns and other burger fixings

First make the burger patties. Chop the jalapeño into small pieces, removing the seeds and stem as you do (you can leave a few seeds if you like more heat). Mince the garlic. Cook the jalapeño in a little oil over medium heat until it begins to soften. Add the garlic and cook another 45 seconds to a minute, until very fragrant.

How to make veggie burgersDrain the beans from the can juices and place in a medium size mixing bowl. Add the jalapeño and garlic mix, salt, onion powder, and a sprinkle of some pepper. Now remove about 2/3 of this mixture to a food processor or blender and puree until mostly smooth (it doesn’t need to be perfectly smooth like hummus, just mostly). Add this back into the mixing bowl with the remaining bean mixture and stir in the egg yolk. Then stir in the flour until a thick batter forms. If the mixture appears too sticky, you can add another tablespoon or two of flour.

Cut the cheese (he he… sorry, I’m super mature) into two squares. Divide the batter in two and press into patties with the cheese in the center. Sprinkle on a little cornmeal and wrap in plastic wrap to freeze or refrigerate if not using right away.

Cook in a little olive oil over medium heat for 3-4 minutes on each side, until the patty looks well browned but not burnt. Toast your buns, and you’re in business!

-You can swap out the all-purpose flour for whole wheat. You may need a little less if you do as it will likely absorb more liquid.
