Of course I had to serve Brussels sprouts. They are my absolute favorite vegetable. No joke! There are about a million different ways to prepare them. Most of the time Trey and I simply roast them until they are crispy and add a squeeze of lemon juice. I decided to create something around this flavor combination: Brussels and citrus.I also added some pomegrante seeds. I love the little burst of flavor and the pretty color pop they add to the dish is nice as well. I think pomegranates are very holiday-ish, so this could be a great dish to prepare in December too. Citrus and Pomegranate Brussels Sprouts
6-7 cups brussels sprouts
4 tablespoons olive oil
2 lemons
1/2 cup panko bread crumbs
1/2 cup pomegranate seeds
salt + pepper
Slice the Brussels sprouts in half. Coat the Brussels in the olive oil. The easiest way to do this is to put all the Brussels in a bowl, pour in the oil and stir them around so every sprout gets coated. Place the sprouts cut side down on a baking sheet and bake at 375°F for 12-15 minutes.
Combine the sprouts with the bread crumbs and a little salt + pepper. Butter a baking dish and pour the sprouts into the dish. Bake at 375°F for another 15-20 minutes. Squeeze on some lemon juice and sprinkle on the pomegranate seeds just before serving.I really enjoyed this recipe, but I’m not sure if I preferred it over last year’s Mustard Brussels Sprouts. Totally trying this! I’m a southern gal and had never tried brussels sprouts until I met my boyfriend from Pittsburgh (where a very large population is German). I thought I’d hate them, but I LOVE ’em!
I usually just have them with salt, pepper, and a touch of olive oil, so this would be an awesome new way to eat them!

That looks DELICIOUS. I used to HATE brussel sprouts, but I am so into them now!! My favorite way to cook them is to roast them in the oven topped with bacon. It’s so easy and sooooo good.

My favorite brussels sprout recipe is oven roasted brussels sprouts with a little shaved parmesan cheese and pancetta. I first tried it when I was traveling in Italy and I am obsessed. This looks amazing though! There is definitely a brussels sprouts trend right now before the holidays!

My boyfriend makes a great Brussels sprout recipe with sliced apples and a light mustard vinaigrette! Roast the sprouts first, then let cool. Add apples and toss with dressing, then refrigerate! So yummy!

My mum has a recipe where she blanches the sprouts for about two minutes in boiling water and then stirfries them with a chopped onion, some garlic, bacon bits and some freshly ground black pepper before she puts them together with a bit of grated cheese in an omelet. Yum!

I’ve never liked Brussels sprouts but then the only ones I ever tried when I was young were soggy! I may try this and see if I change my mind about them as they do look yummy 🙂

Brussels sprouts have always scared me, so to say this recipe intrigues me would be an understatement. My husband loves them, though, so maybe I’ll start with you and Trey’s normal dish and then try this.

brussels sprouts are one of my favourite veggies – and i love making shaved salads with pomegranates! this, however, totally kicks the salad idea up a notch or two. it looks amazing!

Yummmmmm. I love brussels sprouts and adding the citrus, panko crumbs and citrus are just.. yeah!
Brussels sprouts are my FAVORITE. I like to make mine on the stovetop because it’s quick and I can easily control how brown they get. I usually quarter them (or halve them if they’re small), saute them in a good amount of butter with sliced almonds until they get brown, then I hit them with some honey or maple syrup and a squeeze of lemon juice at the end. Add a dash of salt and pepper, and you’ve got yourself a delicious dinner side dish! I make these every Thanksgiving (and on many a weeknight, too). 🙂
