Citrus Salad with Yogurt Dressing

Winter citrus saladI was surprised to find that blood oranges are in season during cold weather months. Sometime last spring I was wanting to make a citrus salad similar to this and I could not find blood oranges anywhere. Turns out that the rich red color is in part due to the cold weather, so you can only find them in cold weather months. So even though citrus might not be the first thing on your mind today I still highly recommend seeking out some blood oranges before it's too late.Citrus salad recipeCitrus Salad with Yogurt Dressing

1 grapefruit
1 orange
1 blood orange
1 tablespoon greek yogurt
1 tablespoon finely diced onion
1/4 cup (or slightly less) citrus juices
1 teaspoon honey
a few pinches of chopped, fresh mintCitrus salad with yogurt dressingRemove the rind from the fruit and cut into thin slices, reserving the juices. If you have a couple slices that are not the prettiest use them for their juice. Waste not, want not. In a small bowl stir together the yogurt, citrus juice, honey and chopped onion. Sprinkle over the citrus and top with a little mint. Enjoy as a fancy starter or side dish this season! xo. Emma
