It feels like Southern Missouri goes from cardigan weather to sweating-in-my-car weather in a matter of days. I adore warm weather so I'm not going to complain, but this sudden change has got me dreaming of icy cold treats. I like making popsicles, mostly to keep myself from eating ice cream every night. Ha! I thought it would be fun to try and create a few flavors this summer that were cocktail inspired. This is my first cocktail inspired popsicle recipe and I must say, I loved them! If you don't have or like strawberries you might substitute raspberries or cherries instead.Strawberry Cocktail Popsicles, makes 4-5
Needed: 1/2 cup sugar, 1/3 water, 2 1/2 cups strawberries, juice from half a lemon, 1 tablespoon Angostura bitters. *note: bitters do contain alcohol, but only a small amount.
In a small pot combine the sugar and water. Simmer over medium heat and stir until sugar fully dissolves. Remove from heat and allow this to cool as you finely chop up the strawberries. Stir in strawberries, lemon juice and bitters. Taste and add more bitters if you prefer. Pour into Popsicle containers and freeze overnight. There are many different sizes of popsicle containers out there so you may need to adjust the recipe to make the amount you need.Have fun creating your own adult-friendly popsicles this summer! xo. emma

I visited Missouri for the first time a couple of months ago and the weather confused me. One minute it was the perfect day, and the next second it was windy and rainy. Crazy midwest!

So funny – it never occurred to me to wonder where y’all are until you mentioned southern Missouri, and suddenly I was all, “Where?!” I grew up in KC, spent untold weekends in the Ozarks, spent most of a month with an adopted grandma in Springfield one year, and now I live in Fayetteville, Arkansas, and still hit various lakes in the Ozarks on both sides of our state line for weekend camping trips, not to mention Silver Dollar City. ^_^ Next time I’m passing through Springfield I’ll have to check out your shop! (I’ll admit I probably won’t buy anything but food/drink, because your clothes, while gorgeous, are out of my price range, but it’d be amazing to browse! π
It’s so funny how many compliments I’ve gotten on some of my “dresses” lately…since your blog gave me the idea to use some of my many long swirly skirts as dresses! I’ve had a dozen people ask me how I thought of that. It’s fun to watch the non-geek people goggle at the idea of reading a fashion blog. π
Nice! Thank you!!!
Yummy, these look so refreshing and delicious! x
Mmm!
mmm, they look marvellous.

What kind of popsicle maker do you use? I love using the wooden sticks instead of the plastic ones that my popsicle maker comes with.
hi y’all – I’ve been reading your blog for a WHILE and have no clue why I haven’t commented before now! Anyway, making popsicles is on my summer bucket list and this looks like theeeee perfect way to accomplish that goal. Can’t wait to try.
wow, yummy!!
