Corn on the cob is one of those foods that can feel almost season-less. I love it in the summer (gotten a few beautiful cobs in my CSA deliveries) and I love it in the colder months too. You can dress it up to feel light or comforting depending on your mood. Here are three ideas for dressing up your corn on the cob. Chili Lime Corn on the Cob, makes 3-4.
Needed: 3-4 cobs of corn, 1 lime, 1 tablespoon salt, 1/4 teaspoon chili powder, 1/4 teaspoon cayenne, 1/4 teaspoon cumin, 1-2 tablespoons melted butter and 2-3 tablespoons olive oil.
Remove husks and threads from corn. In a small bowl combine the chili powder, cayenne and cumin. Brush the corn with a mixture of melted butter and oil until just coated. Sprinkle on the spice mixture and wrap in aluminum foil.
I baked my corn at 350 F for about 20 minutes. You could also throw these on the grill, just adjust your cook time (probably more like 12-15 minutes).
Zest the lime. Use a fork to mash the lime zest and salt together. Once your corn is cooked brush with a bit more butter/oil and sprinkle on your lime salt. Serve with lime wedges.Garlic Feta Corn on the Cob, makes 3-4.

I make a version of chili corn with cotija cheese, but I’ve never tried adding lime. I definitely will next time! oh, and grilling corn is the way to go. it gives it this incredible smoky flavor… then again almost anything tastes better on a grill 🙂

I am not fan of this, but the recipes sounds great, in my country is very popular to eat this with 3 types of sauces: ketchup, mayonnaise, mustard and powder cheese, in El Salvador call it Elote loco (crazy corn)

The other night, I seasoned some cobs with a little butter, garlic, and lemon zest. Then wrapped them in foil and put them on the grill with some pork chops. Mmmm, good eatin! 🙂

I love corn on the cob. We’re in Thailand now and I’ve had barbequed corn with peanut dipping sauce from a market a few times now.
