Dairy-Free Vanilla Ice Cream

Dairy free ice cream (click through for recipe) I love ice cream. I especially love hot fudge sundaes. Trey can tell you, I pretty much try to con him into getting hot fudge sundaes every week. I’m shameless. 

This is no ordinary sundae, as the base of this is something totally delicious but a little bit unexpected. This ice cream recipe is soy-based, so if you’re vegan or just dairy free for whatever reason, I highly recommend you give this a try. It’s a treat!

Three ingredient vegan ice cream (abeautifulmess.com)Dairy-Free Vanilla Ice Cream, makes one quart.

two 8 oz. packages of dairy-free cream cheese (I used Tofutti brand)
1 1/2 cups sugar
3 cups soy milk
1 teaspoon vanilla extract (or the seeds from one vanilla bean)

Allow the cream cheese to soften to room temperature. Whip the sugar and vanilla into the cream cheese. Then slowly add the milk so the mixture is well combined and free of lumps. Refrigerate the mixture until cold (at least 2 hours or overnight).

How to make ice creamNow pour the ice cream batter into your ice cream maker and follow the manufacturer instructions (all ice cream makers work a little bit differently).

I recently bought this Cuisinart ice cream maker (in teal, of course) for the office kitchen. At home I use a KitchenAid attachment ice cream maker. I often get asked about what ice cream maker is best, so I thought this would be a good opportunity to try out a different one and also not have to lug mine back and forth from home. 

This ice cream maker was good. It pretty much yielded exactly the same results as my KitchenAid attachment, and it was a little less expensive. The more you know, right? 🙂

How to make ice cream As with most ice cream makers (from what I can tell), the ice cream right out of the maker tends to be more of a soft serve consistency. If you like your consistency a little more solid, more scoop-able if you will, then freeze the ice cream again overnight. 

Above, you see the consistency of this ice cream recipe if you freeze it the additional night after making it. It’s the perfect consistency, if you ask me. But, like I said, if you like soft serve then you’ll have less time to wait for your homemade ice cream.

  • No. I’ve only tried it with soy milk so far. I bet it would still be very good though as long as you use some kind of non dairy cream cheese. The thickness of the cream cheese off-sets how thin the alternative milk consistency can be.

  • I’m sure sure it’s leftover suspicion from when I was a pip and my mom tried to smuggle tofu into everything, and that this ice cream is actually great (because your food opinion is like gold, Emma!) but ice cream with an ingredient called “Tofutti” makes me a bit nervous 😉

  • Not all sugar is vegan, just an fyi. 🙂 Most granulated white sugars are processed with bone char.

  • Oreos are vegan, but they contain palm oil so they’re still not a good idea if you care about animals or the rain forest.

I just found out this week that I have to begin going dairy-free (among other things) for medical reasons and was crushed at the thought of not being able to make ice cream in my beloved ice cream maker (I have the same Cuisinart one!). And then… this! So excited to try this recipe. Your pecan pie ice cream has been my favorite that I have ever made, so perhaps that can be reworked to be non-dairy…?

  • I have an egg sensitivity so the absence of eggs in this recipe has me thrilled…I cannot wait to try it. It also seems like a great foundation recipe to add a berry puree or some other totally delicious add in.

  • I thought it would be fun to make a dairy free version of my husband’s favorite ice cream batter I make (cheese cake ice cream). Originally I thought I’d call this recipe something like “Dairy-Free Cheesecake Ice Cream” but after working on it some it just never tasted like cheesecake. But it was still really yummy. So, in a way, I guess it’s actually a failed attempt at something else. 🙂

  • Yes, it’s very much a base recipe. You could EASILY add in berry puree, chopped nuts, etc. Just add it in toward the end of mixing the ice cream (most ice cream maker directions will prompt you to do this way).

    You could turn this into SO many different recipes. Let us know what you end up making!

  • Love that you guys are posting something vegan!! Since I don’t have an ice cream machine, I like to blend up sliced frozen bananas (usually with peanut butter and cacao powder)for quick vegan ice cream.

  • I’ve only ever tried dairy-free ice cream with a mix of full fat coconut milk and almond milk. I’ll have to see if I can track down some dairy-free cream cheese because this looks yummy!
