I love the sweet and tangy taste of fresh pickles. I had quite a few cucumbers in my CSA bag this past week so I thought it would be fun to make a few batches of homemade pickles to enjoy on sandwiches or just as a snack in the coming weeks. Did you know that it can be super easy to make your own pickles? It's true! There are all sorts of methods out there but for simple, quick pickles try this.
Slice up your veggies and place in a glass jar. I like to use cucumbers for classic pickles but really you can pickle just about anything. Try root vegetables like radishes and carrots. Place slices veggies in the jar and add a few peppercorns and dill sprigs.
In a bowl combine 1 cup water, 1 cup white vinegar, 2 teaspoons salt and 1 tablespoon sugar. Stir to dissolve. Pour into your veggie filled jar(s). Seal and leave in the refrigerator overnight. These will be ready the next morning and can last up to a month. The longer they set the softer and more… uh… pickled they will get. So if you like a little crisp to your pickle don't wait too long.
It's that easy! These pickles are perfect for sandwiches or snacking. xo. Emma

It’s sad to say, but I don’t think I have had homemade pickles since I was a kid. Definitely have to try this for my 3 pickle-eatin’ kiddos:)

I absolutely love making things pickled. I don’t add sugar just because I don’t like sweet to my pickles but use the rest of your recipe to a T. I love to make green beans this way, and I pre-cook baby carrots for about five minutes, cut them in half and add hot peppers to the mix. YUM!

Done. I can’t wait to crack into these tomorrow. I adore a real crunchy pickle. I added a few red pepper flakes to one batch. I hope it turns out well…and doesn’t completely set my mouth on fire. Fingers crossed.
Also, I’m totally inspired to find a CSA box provider for my home. The Hubs and I need more intentional instead of accidental eating.

My grandma pickles cucumbers and cans lots of veggies. She uses a pressure cooker though so they last a really long time until you open them. She tells me the story of how one day she was canning green beans and the pressure cooker blew a gasket. She was in the next room and heard an explosion. It just cracks me up to hear her say, “And there were beans EVERYWHERE!” lol it was good she wasn’t in the room too because boiling bran explosions are probably dangerous!

Wow, I was just wondering about easy refrigerator pickle methods…my garden is producing cucumbers quicker than I can eat them 🙂 This looks like the perfect way to try a lot of different flavor combos. Gotta try some sliced jalapeños in there.
