Elsie has been requesting bagels for a few weeks now. It’s been quite some time since I last made bagels. Here’s why: they are very addictive! My all time favorite is blueberry bagels, but a very close second is everything bagels. ๐What’s sort of strange about making bagels is you have to boil the dough before baking. This process creates a chewy interior crumb while the outside is browned and almost crisp.Everything Bagels, makes 8
1 1/4 cup warm water
1 1/2 tablespoon sugar
2 teaspoons (one package) active dry yeast
3 1/2 cups bread flour
1 1/2 teaspoons salt
2 tablespoons sesame seeds (I used both black and white)
2 teaspoons poppy seeds
1 teaspoon caraway seeds
1 teaspoon coarse grain sea salt
1 egg
In a bowl, combine the water and sugar and stir to dissolve. Pour in the yeast and allow this to sit for 6-8 minutes. In a larger bowl, whisk together the flour and 1 1/2 teaspoon salt. Once the yeast mixture has had time to activate, pour it in to the flour mixture and stir until a crumbly dough forms. Turn out onto a floured surface and knead for 6-7 minutes until the dough begins to become elastic-like. You can also do this in a stand mixer with a dough hook attachment. Place the dough in a lightly oiled bowl, cover and allow to rise in a warm place for 1 hour.Turn the dough out onto a lightly floured surface and divide into eight equal pieces. Shape into a ball and press your finger through to form the center hole. Once you have shaped all the bagels, allow them to rest for 10 minutes or so. Now place them into a pot of boiling water. They should float. Let them cook for 45 seconds to 1 minute on each side, then remove to your prepared baking sheet.Whisk the egg plus 1 teaspoon water in a small bowl and brush this over each bagel. Sprinkle on the seeds! The egg wash will help them stick as well as add a pretty brown sheen to your bagels.Eureka! After you add the seeds bake at 425ยฐF for 20 minutes. If you don’t eat them all in one day, store in an airtight container for 4-5 days.Serve these with cream cheese at breakfast or make a bagel sandwich for lunch. ๐ Enjoy! xo. Emma

SarahM- I am not sure of the brand. Sorry! I’ve had them a while now (as you can probably tell). I think I may have bought them at a restaurant supply store (you don’t have to own a restaurant to get in on the goods usually). ๐

Emma, is there going to be a noticeable difference if I use whole wheat flour instead of bread flour? That is what I have on hand. And I LOVE everything bagels, too. Been a favorite of mine since I was a kid.

For a baking sheet, America’s test kitchen said Lincoln cookware cooks best, half sheet size. You can get them on Amazon.

NYC bagel maven weighing in here–
That recipe could really benefit from some malt or baking soda in the water for boiling– will improve color and shine on the bagels– the malt giving the bagels that hint of sweet and something else that is characteristic of a classic bagel. You will then not need to add egg to the outside. They will be plenty shiny and have more consistent browning.
Also, you might want to play around with adding some high gluten flour to the mix to give them a better density/chew.
And of course, to those living in places with soft water– well you’re probably out of luck when it comes to bagel making. Hard water may not be great for hair, but it’s part of what makes NY bagels and pizza outstanding.
I was wondering about the baking soda addition. About 1/2 cup? thanks!

It’s been so long since I made my own bagels, but they are soooooo much better than the bagels I can get near me. I make mine with half wheat flour to make them a little more hearty.
I haven’t been able to find any in Santiago so I’m def. trying these on the weekend. I had one every single day when I was an exchange student in Canada, and I miss them so much.

I’m a Canadian in a bagelless land (Denmark) and bagels have been on my to bake least for eons, but I always seem to lose my nerve. Everything bagels are my absolute favourite and I will have to give this recipe a whirl.
We make some pretty freaking delicious everything bagels at the coffee shop I work at in Kansas. I never knew how much I would love them until I tried them. Now I eat about one a week.
An everything bagel with cream cheese is a day maker in my opinion.

julie- not sure as I haven’t tried it yet. but if you do decide to try I would let it rise then punch it down and store it (tightly wrapped in plastic wrap) before cutting it into 8 pieces. Let it warm up a bit before using it the next day, otherwise it may not shape well. Good luck!

I don’t usually comment but wow! I made bagels! I forgot to let them sit for 10mins after boiling but they still turned out great. I didn’t have all the seeds so I did onion powder, oregano, and caraway with sea salt. THEY ARE ADDICTIVE I hope there are a couple left for my husband… but no garauntees.

My fiance and I made these this morning. Great recipe! I think they would have turned out even better if we had a stand mixer. Our bagels weren’t as smooth as Emma’s, but they still tasted great!

I made these last night – they’re amazing. Great simple recipe and the best bagels I’ve ever had.
I made these yesterday and they were amazing. I try to avoid eggs , so I brushed them with olive oil instead. I also tweaked the topping mix to suit what I had in my pantry: I included sesame seeds, poppy seeds, maldon salt, a bit of onion and garlic powder. My mother, who lives in Spain, without access to bagels, was so jealous of the pictures I sent her that she made some too. She loved them. Thanks again for the recipe!

These are SO AMAZING. I made them today and it’s seriously hard not to eat them all. The dough was pretty shaggy, so I was grateful for the help of my kitchenaid mixer this time.
Perhaps next time mine will be as gorgeous as yours! I was lazier with the forming than I should have been. The imperfections stick around instead of “rising out” like they do with bread loaves.

Made these last night and was so excited to wake up on this snowy NYC day and have one with my coffee. Great recipe. I didn’t have plain sesame seeds so I used wasabi sesame seeds… they add a little something.
wow, I’ve just made them (just not everything, but with oatmeal on top due to lack of seeds..) and they’re perfect! better than anything I’ve ever eaten at a bagel house. finally a perfect, vegan bagel I can make at home!
