Have you ever tried southwestern egg rolls before? It's kind of an California Pizza Kitchen, or TGI Fridays type thing. Oh yes. And, they are totally delicious! Well, this is the meal version of that tasty appetizer. I don't know about you, but I often find that my appetizer turns out to be my favorite part of a meal. So, why not make it the main course? My thought exactly. Just look inside that burrito. Get excited! We're about to make these.Fried Black Bean Burritos, makes 5-6.
2 cans black beans
1 small red bell pepper
1/2 red onion, diced
2 cloves garlic, minced
2-3 tablespoons olive oil
1/2 teaspoon cumin
1/2 tablespoon worcestershire sauce
salt + pepper to taste
1/4 cup chopped cilantro
1-2 avocados
1 cup shredded cheddar cheese
5-6 large tortilla shells
oil for frying (I used canola)
First make the filling by lightly sauteing, in olive oil, the bell pepper, onion, and garlic just until they begin to soften. Drain the black beans and add them to the pot. Stir in the cumin, worcestershire sauce and a little salt and pepper. Taste and add more salt or pepper if needed. Now fill the burritos with the black bean filling, some cheese, a little cilantro and some sliced avocado. I think the avocado is really what makes these, so feel free to pile it on if you like avocado. 🙂Fold the burritos up. And, if you are frying you can use toothpicks to hold the shells together. In a large pot heat some oil to around 350°F. How much oil? Just enough that the burritos can float around. Cook the burrito on one side for 1-2 minutes, then flip and cook on the other side. Place on a plate covered with paper towels to remove excess oil. Remove the tooth picks before serving.
I also made a little dip for my burritos by combining 1 cup sour cream with 2 tablespoons chipotle peppers in adobo sauce. Serve along with lime wedges.For a healthier version of these you can bake the burritos instead of frying. Bake at 350°F for 18-22 minutes, until the edges begin to brown. Make these some night soon. This burrito looks so yummy! I’ve never thought about trying to fry them before, so this is something I will definitely try when I feel like something fried. The baking route definitely works well too, I can attest!

She’s out of Fair Grove, and normally you can find her at the FG Farmer’s Market on Wednesdays, but it may be closed for the season.
