Gingerbread Granola

Gingerbread granola Gingerbread granola I didn’t make a gingerbread house this year. I don’t usually. It’s not a tradition for me. I just think they are SO cute when I see other’s creations. So, I think in the back of my mind every year I half plan to do one.

But I’ll tell you what I did do: make gingerbread granola. I love greek yogurt with a little  honey and granola for breakfast all year long. Swapping out my usual granola for a gingerbread flavor just makes my morning routine feel a little more festive. And I love that. 🙂Gingerbread spiceGingerbread Granola, makes 3 cups

2 cups oats
1 cup almond slivers
1/3 cup olive oil
1/3 cup maple syrup
1/2 teaspoon salt
1/2 teaspoon cinnamon
1/2 teaspoon ginger
1/4 teaspoon allspice
1/4 teaspoon nutmeg
1/4 teaspoon cloves

In a bowl combine the oats and almonds. Pour over the olive oil and maple syrup. Mix well so all the pieces get coated. I like to combine all the spices and salt in a small bowl or cup. Evenly sprinkle the spices over the mixture, stir so everything gets mixed well.How to make gingerbread granolaOptional: press the granola into a gingerbread man cookie cutter. Or you can just spread the mixture in a thin layer onto a cookie sheet covered with parchment paper or a silpat mat. Bake at 350°F for 15-18 minutes. Gingerbread granolaThe little gingerbread man granola will be quite fragile, but they are so cute sticking out of your morning yogurt (or bowl or milk, whatever).   • I made this yesterday as a gift for my granola-loving son and it came out great and so easy! I didn’t have access to almonds, but had lots of pecans, so used those instead, roughly chopped. Excellent recipe and wonderful for gift-giving!
