I haven’t made buttermilk pie in for.e.ver. (<–read that like Sandlot) It seems like I end up with leftover buttermilk often. It’s just a super useful ingredient, so I buy it. Then I don’t use all of it, so I find things to make with buttermilk for fun. I actually really love buttermilk pie, it’s a custard type pie. And this time I tried sweetening it with honey.
3 eggs
2/3 cup sugar
1/2 cup honey (I used this kind, it’s amazing!)
2 tablespoons flour
1 cup buttermilk
1 teaspoon vanilla extract
Whisk the eggs with the sugar and honey. Now stir in the other ingredients and pour into your favorite pie crust (mine’s store bought—hence the “halfway homemade”). Bake at 350°F for 40-45 minutes until the sides are golden brown and the pie is set (it will still have a slight jiggle in the center). Allow to fully cool before serving.
This pie is perfect topped with fresh whipped cream or you can add fresh fruit. Happy pie making! xo. Emma

You can make buttermilk substitute too! 1 T lemon juice per cup of milk! It comes in handy.

i was literally JUST scratching my own head too wondering what to do with my leftover buttermilk! it seems like recipes always call for such a small amount so i’m always left with half a carton in the back the fridge. this looks so delicious as well, will have to give it a try!
That looks amazing! I’ve never tried it, but it’s on my to-bake list now. Side note- have you ever tried powdered buttermilk for your recipes? Works great, especially good for baking!

OOh this looks great. And you’re right, you NEVER use an entire container of buttermilk, it always ends up going bad before I use it up.

I like to use refrigerated dough (the rolled-up kind from pilsbury or generic)- I think it tastes so much better than pre-baked crust.
I am using your chocolate mold idea for valentine’s day. I am making DIY chocolate bowls from tupperware and saran wrap (couldn’t find the mold anywhere) and filling it up with a bit of brownie, topped with berries cooked in water and sugar. I think the boyfriend will enjoy it, thank you for the ideas.

I made it last night – it was easy and fun to make and it was delicious for a lighter sweet breakfast. I decided to leave it in for the full 45 mins and I think I baked it a little bit much, so anyone making this I do recommend the 40 minute mark. Love your recipes!:)

I made this on Thursday for my husband’s birthday (which also happens to be Valentine’s Day) in lieu of a traditional birthday cake. It was AWESOME! Since it was for a special occasion, I went ahead and did a homemade pie crust, too, which didn’t add much time or energy to the recipe. Thanks so much for posting this – it’s going to be in the regular dessert rotation at our place from now on.
