Today we are excited to share a new feature with you: Halfway Homemade. The idea is simple. You use storebought/ premade elements in your homecooked recipes. This is my no means a new concept. I think most home cooks use this kind of shortcut whenever they need. Using a few key premade items here and there is a huge time saver, not to mention it's often economical too. Win win. These are mini quiches made with puff pastry for the crusts. I've seen similar ones also called baked egg souffle before (like the Panera version, which I love!).
Mini Quiches, makes 3
puff pastry (I used Pepperidge Farm)
3-4 eggs
1/4 cup half and half or cream
salt + pepper
1/4 cup cheese (I used parmesan) Preheat the oven to 350°F. In a bowl whisk together the eggs, cream, salt and pepper. Butter your baking dishes (I used large ramekins). Cut your puff pastry into large squares that will slightly hang over once placed in the baking dishes. Fill 2/3 full with the egg batter. Fold the edges in toward the center. Sprinkle on the cheese and bake for 35-40 minutes, until the egg looks set.
These will appear quite puffy as you remove them from the oven, but they will settle a little as they cool. I was a little nervous that they might stick to the ramekin dishes but the butter did the trick! You can customize this recipe to your taste by adding anything you like: steamed broccoli, lightly sauteed onions and mushrooms or even… dare I say it… bacon. Whatever you're into. Stir it in before baking. These are a super easy and delicous homemade breakfast that can easily come together on a lazy weekend morning by using ready made puff pastry. Yum! xo. Emma

Oh I love quiche so much. It’s just so versatile.
I’ve never thought of doing them with puff pastry, I’ve only ever done them with shortcrust.

Oh wow these look so good! I love how curvy the crust is. You can see all the layers of flaky goodness. The flavor possibilities are endless!
When I assisted a children’s cooking class, we made mini quiches much like this. Instead of using baking dishes, we used a cupcake pan. It’s been a long time since I’ve made one…maybe I’ll try making this with the girls one day.

I’ve been making mini-quiches at home lately by pressing crescent rolls into a cupcake tin and then filling with a mixture of eggs, 1% milk and a lot of chopped spinach. It’s really filling and really tasty! (But not as pretty as these!)

Omg, imagine a sweet version of this dish. Put slices of apples in the puff pastry together with some cinnamon and sugar (or maple syrup). Serve with some vanilla ice cream. Fantastic!

What a smart idea! I love using the puff pastry sheet for baked brie, but then I always have an extra one on hand (since two come in the package). Now I know what to do with the other!
