Since it is soup and chili season, I thought it would be fun to make some homemade crackers. What I love most about making your own crackers is that you can use any kind of cheese you want. So you could make super fancy gruyere crackers or you could use bright yellow cheddar for a more Cheez-It style look. 🙂 For these I used grated Asiago cheese. Be sure to adjust how much salt you add if you use a super salty cheese.Cheese Crackers, makes about 2 dozen Cheez-It size squares (or a million tiny letters).
Needed: 3/4 cup flour, 1/4 cup whole wheat flour, 1/2 teaspoon salt, 1/2 cup shredded cheese (hard cheeses work best), 4 tablespoons cold butter, 1/3 cup cream and a pinch of pepper.
In the bowl of a food processor combine all ingredients but cream. Pulse to combine, mixture will be very crumbly. As the food processor is running pour in the cream in a steady stream. Remove dough from bowl and roll out on a floured surface. Roll so dough is about 1/2 inch thick. Now cut into small squares or use cookie cutters to create shapes.Bake at 400°F for 12-15 minutes. The crackers will slightly puff as they bake. The small letter crackers only took 11-12 minutes to bake while the squares needed an additional 2-3 minutes. Just keep an eye on them and when the edges are golden brown and crispy looking then you know they are done. For added flavor brush with a little oil and sprinkle with coarse grain sea salt. Store in an air tight container for up to a week. xo. Emma

Ohhh, how nummy! We moved to Spain with our family a couple of months ago, and I have been making homemade soup constantly: carrot-ginger, split pea, chicken noodle, green lentil, potato cheese, French onion . . . and the list goes on. Just wanted to let you know that I made these last night and they were terrific! So tasty! I made two soups yesterday (stocking — hee hee, unintentional soup pun– up for the week and some to put in the freezer) and these were the cheesey icing on the figurative cake. Oh, and one of the soups I made was the Sweet Potato/Coconut/Coriander (but it’s cilantro, really, because it’s *fresh* coriander) from the Cornucopia cookbook. EVERYTHING I’ve ever made from that book has been amazing, and when I visited their restaurant in Dublin, it was fantastic. You should check it out — it’s veggie!
