Did you know that potato chips are really easy to make at home? It's true. I'd say they are even easier than homemade french fries, which I also love. Really, anything starchy has my heart. I hadn't made potato chips in a long time. And as I was looking around a health food store that just opened near my home, I saw they had a large selection of different varieties of sweet potatoes. I love sweet potato fries, sweet potato hash browns and sweet potato pie. So I figured I'd give sweet potato chips a try. I bought three different types of sweet potatoes. You can see them here, (the photo below) but I didn't write down their names before I left the store. π Guess I'll just have to go back soon. Peel and clean the potatoes. For best results use a Mandoline to slice the potatoes very thin. Allow them to soak in cold water for 10 minutes. Then remove and pat dry with paper towels.Fry in oil heated to around 375Β°F for a few minutes. Remove to a plate lined with paper towels and immediately sprinkle on a little sea salt and black pepper. Before serving sprinkle on a few chopped, fresh herbs. I used parsley here, but basil, rosemary or thyme would be fantastic too.These are best served warm the day they are made. Serve them along side hamburgers and hot dogs at your next BBQ. Uh… yum! I made these a couple days ago! I fried them in coconut oil and sprinkled on a little cayenne pepper and they were soooo good – sweet and spicy. π

Sweet potato fries and chips are our go-to side dish ^^ We usually marinate them with freshly chopped rosemary (homegrown), chili powder, sea salt, black pepper and olive oil and bake them in the oven. Super tasty. I wish we had different kinds of sweet potatoes, too. We only get the “normal” ones since they aren’t that popular over here.
I just added Mandoline onto my list of kitchen buys.

I make these all the time, but add less salt and dust with a generous portion of freshly grated parmesan. The parmesan takes it to another level. Definitely my favorite snack. π

I didn’t know what a Mandoline was till now and I want one. I have been just using a knife and I cant ever get them thin enough or consistent. Double check the link you put up though cause for some reason it’s not working when I click it- I had to put it into google search (could just be from my end though).

Dear Emma,
Last year I went to study at London, and then became absolutely in love with hashbrowns. Why am I telling you this?
