Holy guacamole, y'all! I can't believe I've never posted about my love for guacamole. That's just weird. Funny story: My mom swears she ate guacamole the day I was conceived, and that's how my lifelong obsession with this perfect food came to be. Now it all makes sense. But really…Jalapeno Guacamole, serves 4-6 as an appetizer
3 ripe avocados
1 lime
1-2 jalapenos
4 green onions
Garlic powder and Lawry's Seasoned Salt and Mexican seasoning (I love Mole Poblano from Oaktown Spice Shop or taco seasoning from Trader Joe's) to taste
2 kale leaves
Crop your avocados, green onion and kale leaves into small pieces. The kale adds a little texture. Try it. you'll like it! Chop your jalapeno (I used 1 small jalapeno, but you can add more if you're into really spicy food), removing the seeds. Keep a few larger jalapeno slices for garnish and chop the rest into small pieces, adding it to the mixture. Add seasonings. Use a fork to mush the avocado, mixing the ingredients together in a bowl. Squeeze the juice of half a lime into your guacamole, mixing it with a fork. Use the rest of the lime as garnish. I served mine in half a red cabbage leaf. My mom had a peanut buster parfait from DQ the night she gave birth to me. To this day it’s my favorite thing to get there! So I don’t doubt that’s where your love of guacamole stems from. I have always put fresh lemon, garlic and cilantro in my guacamole! I have a whole bunch of kale in my fridge right now so I will have to give it a whirl!

i, too, have a ridiculous love for the guac! i could eat it all day, every day. i’ve never thought to put kale in it though, and it seems like a great idea! i also have an unhealthy obsession with cilantro, so i’ll be adding some of that too. thanks for sharing!

It’s amazing how many different ways there are to make guacamole! I once went to a “Guac Off” and tasted about ten different versions in once sitting. All delicious, though my favorite is just mixing avocado and salsa. Yum!
My guac is avocado, garlic salt, olive oil, and chopped tomatoes. The garlic gives it a really nice twist! And I never, ever, ever measure, because measuring is for fools 🙂

This recipe looks incredible! I’m obsessed with avocados, and I try to incorporate them into my meals a few times a week. DEFINITELY trying this idea out!
My Mom ate a can of chick peas everyday while pregnant with me, and as a result, I could live off chickpeas alone. However, Guac is a second close fave! I love fresh crushed garlic, diced tomato, red onion, a squeeze of lime, and a few dashes of salt & pepper in my favourite Guac recipe, but this is on the list for the next version to try.

Recently (at a restaurant in Fort Collins, CO), I had the most delicious guacamole ever. They called it “Exotic Guacamole”. Ingredients: avocado, strawberries, mango, goat cheese, and habanero (not sure if it’s a sauce or actual peppers). It was so wonderful and refreshing. According to my waitress, the trick is not to use too much goat cheese or you will overpower the avocado flavor.

Plain greek yogurt is my secret ingredient. It just makes it so creamy!
The best tip I learned about making guac is to put the jalapeño through a regular old garlic press. It minces the pepper so fine it is even throughout the guac.
