In one of the last kitchen basics a reader asked about homemade fettuccine alfredo sauce. I was super excited, because (1) alfredo sauce is quite easy to make. And (2) in order to show my favorite recipe I needed to make fettuccine, which means I get to eat a big plate of pasta. Score! I don't eat pasta all that often. But when I do, it's such a treat. A warm bowl of pasta is the perfect comfort food.
Alfredo Sauce, makes enough for 1 pound of pasta.
Needed: 3 tablespoons butter, 3 tablespoons greek yogurt, 1 cup heavy cream, 1 egg yolk, 1 cup grated Parmesan cheese, and salt + pepper to taste.
In a small pot melt together the butter and yogurt over medium heat. Whisk in the cream. In a small bowl combine the egg yolk and add a tablespoon of the hot cream—whisk together. This will temper the yolk. Now add the yolk to the pot and whisk to combine. Let this simmer for a few minutes to allow the cream to thicken. Stir in the cheese and season with salt + pepper. Now you are ready to serve.

My favorite Italian place here in Austin, TX (Milto’s, its called) puts little bits of dill in their alfredo sauce. It gives it a really unique, amazing flavor. This recipe looks really good, but I’d have to try it with some dill added 🙂

I make alfredo sauce more than I should and I wanted to add in that adding some crushed red pepper flakes to the butter for a minute or so before adding everything else makes a delightfully spicy sauce. I’m always sad when ordering Alfredo because it never has the spice mine does at home.

I second the addition of a little nutmeg. It sounds weird, but it really accentuates the flavor of the parmesan.
I’m crazy about pasta too! There’s nothing so delicious as a good pasta dish, plus, many of them are so easy to make. Never tried the Alfredo sauce, but I’ll definitely will!

Since I’m Italian I eat pasta very often but I have to say to all Americans out there that “Alfredo sauce” is pretty common in USA but in Italy it doesn’t exist. I know it’s weird, like “bolognese spaghetti” made with meat balls… well there are “fettuccine con ragù alla bolognese” (ragù means “sauce of minced meat, tomato, onions and sometimes carrots) and people eat spaghetti with meat balls as well, but it’s a kind of Disney thing, if you know what I mean 😀

Wow, this looks awesome. I absolutely love alfredo sauce, to the point that I crave it. They don’t do it here in the UK though, so my only option is to make it. Trouble is it’s so bad for you… Not that this recipe is innocent, but I like the greek yoghurt touch. Planning on making this very soon!
