I first fell in love with madeleine cookies over 10 years ago while watching the very first Transporter movie. Is it weird that what I took away from that action film was a love of sea shell shaped cookies? Maybe. But there you have it anyway.
I also really like Transporter. I thought it was awesome. I love action films. πI was recently gifted a Madeleine pan so I was excited to give these a try! It's kind of strange to think that I've been a fan of these cookies for so long but have never gotten around to making them. The batter is actually really interesting because it involves incorporating melted butter into creamed eggs and sugar. Most cookies recipes warn against using melted butter, as they require softened butter. Which is not the same thing. Duh. Baking can be so fickle. But Madeleines are not fickle, they are super easy to make once you have the cute pan. πMadeleine Cookies, makes 18 (regular size). Recipe from Martha Stewart.
4 eggs
1/4 teaspoon salt
2/3 sugar
1 teaspoon vanilla extract
1 cup flour
1/4 cup butter, meltedButter and then lightly flour the baking pan. Be sure to get butter in all the little ridges so the cookies will be easy to remove after baking.
Beat the eggs, salt and sugar together until the batter begins to thicken (about 8 minutes with an electric mixer on low). Toward the end of mixing add in the vanilla. Stir in the flour. Then stir in the melted, cooled butter. Quickly spoon the batter into the preparred baking pan. Bake at 375Β°F for 10 minutes.I like how these kind of puff up on the back sides while cooking. Let them cool for a few minutes before dusting with powdered sugar. Yum! If you've never had a madeleine before you are in for a treat as they are dense and chewy and taste like butter. π Happy kitchen experiments! xo. Emma

I always eye the madeleine pans when at the kitchen supply store, but I always think, meh, it’s only good for the one thing. Then I get home and wish I had gotten it! These look awesome!

We love them in this house too. i thnk they are even yummier with a grated lemon in them. also, for extra decadence….roll them in melted butter and then caster sugar (i think it is called something different in the US, but its fine granulated sugar)….seriously….i mean SERIOUSLY…it is totally RAD!! hi Emma, I don’t mean to be contradicting you but Madeleine’s should not be dense and chewy- this would mean the batter has been over mixed. Madeleine’s should always be soft and spongy in texture- yours did have a beautiful crisp outer texture though judging from the photos so just adjust your batter mixing time a bit and you should be fine. you ask how do I know this? I’m French and I make Madeleine’s since my childhood. Bisous, AurΓ©lie xx

Nutella hearted Madeleines are the best!(if you didn’t already think of this ;). Just put some nutella in the middle of the batter before putting it in the oven. And then… enjoy π
